We have a lot to learn here.
Bittergourd or bitter melon is a climber. It's common in Asian countries. You can check Thelma's link that she has shared for Gill.
It's very good for health and is considered a medicine for diabetes.

Actually I like the bitter taste in all our traditional dishes. In this one it was not bitter at all. Onions, tomatoes and spring onion masked the taste and that's why my daughters liked it![](/Content/images/emotes/lol.gif)

@Shavkat One of them is to peel the skin lightly. Other is to cut and coat with bit of salt. Then leave it slanted. The bitterness comes out with salt water. But I don't try any. I love it with bitterness and it's healthier this way. ![](/Content/images/emotes/happy.gif)

Bittergourd is common in Asian countries. And this dish is made in many Asian countries with little variations.

Not sure what bittergourd is. I assume it is a form of squash. I do enjoy some types of squash. Depends how they are prepared. Butternut and other orange colored squash are not a favorite. Stems from my dislike of them in my childhood.
I have tried them again and I do not care for them. However, when they are used in a different way I will try them.

It was not that bitter as it would be when cooked alone. The bitterness was maskec by eggs, onion, tomatoes, and spring onion. Your dish looks yummy!
I cooked the bittergourd well before adding eggs.

How many eggs do you use with one bittermelon? We sell them but I never considered trying them before.

It's bitter in taste and so many might not like it. However, some like me love it for the bitter taste. So depending on the bitterness and how much you want to mask it, we can use the other veggies and eggs. Here for two long bittergourd, I used two onions and tomatoes and a bunch of spring onion and coriander. I added 8 eggs as I was cooking for four people.
