There are a lot of things that I have to thank Mylot for. A wonderful community, a great place to learn and share and definitely earn some money doing so. And it has been a great site to relax for me from the time I joined it. I love this place I learnt a lot about so many things around the world.. Dishes from the different culture. And there is one dish that I learnt here and it's a big hit in my house. I had once posted one discussion about harvest of bittergourd from my garden. And in comments there one mylotter had mentioned about a dish using eggs and bittergourd. I love bittergourd and so does my husband. But my daughters never liked it. Now with this dish, they have started having bittergourd on their plate. And I am thankful to Mylot for that. You can see the dish in picture being cooked. I had two bittergourd from my kitchen garden.. Not enough for a dish for all. But making them with eggs , we had enough for a meal. And everyone relished it I am sure many would have learnt dishes here and tried them. Or even tips or advices that might have helped you. It's a great place

I agree, I've learned a lot from other myLotters. What is bittergourd? Is it a type of green veggie?

We have a lot to learn here. Bittergourd or bitter melon is a climber. It's common in Asian countries. You can check Thelma's link that she has shared for Gill. It's very good for health and is considered a medicine for diabetes.

Actually I like the bitter taste in all our traditional dishes. In this one it was not bitter at all. Onions, tomatoes and spring onion masked the taste and that's why my daughters liked it

@Shavkat One of them is to peel the skin lightly. Other is to cut and coat with bit of salt. Then leave it slanted. The bitterness comes out with salt water. But I don't try any. I love it with bitterness and it's healthier this way.

Not sure what bittergourd is. I assume it is a form of squash. I do enjoy some types of squash. Depends how they are prepared. Butternut and other orange colored squash are not a favorite. Stems from my dislike of them in my childhood. I have tried them again and I do not care for them. However, when they are used in a different way I will try them.

Here is the link. A very common Asian veggie. Healthy and used as medicine for diabetes. It is bitter in taste but we like it with the bitterness. I am sharing the link here

We also cook bitter gourd with egg here but it would be a bit different from that. We don't mash the bitter gourd. That's interesting indeed. Does it still taste bitter? Image : rasa.com

It was not that bitter as it would be when cooked alone. The bitterness was maskec by eggs, onion, tomatoes, and spring onion. Your dish looks yummy! I cooked the bittergourd well before adding eggs.

How many eggs do you use with one bittermelon? We sell them but I never considered trying them before. I will try some of yours while I'm here visiting.

It's bitter in taste and so many might not like it. However, some like me love it for the bitter taste. So depending on the bitterness and how much you want to mask it, we can use the other veggies and eggs. Here for two long bittergourd, I used two onions and tomatoes and a bunch of spring onion and coriander. I added 8 eggs as I was cooking for four people.
