I made keto pumpkin cookies on Wednesday night and they were.. Different. First of all, the recipe called for cinnamon and nutmeg instead of pumpkin pie spice. It also included coconut oil. They were a little more wet than I anticipated when I scooped them onto the baking sheet. They came out more like a muffin than a cookie and they lasted until maybe Saturday before I had to toss them. I don't know if I'll follow this recipe again. I still have cans of pumpkin and might make a bread

Well it is good to try the recipes to see if you will like them. Wholesum Yum usually has good recipes!

These were.. I mean they weren't bad. I do love Wholesome Yum's recipes. There are some keto bloggers out there that will give you the recipe and the calorie count but not the carbs. I like that Wholesome Yum breaks it all down for you.

@MommyOfEli2013 Oh yes, I've looked through gnom-gnom too! I love that these blogs all have the "jump to recipe" feature. I hate reading everyone's life story, just give me the recipe!

@ScribbledAdNauseum Well at least they weren't bad! That's great that on Wholesum yum they do break it all down. One I like that has good recipes is gnom-gnom.com

I need to re-phrase that. I was able to eat them from Wednesday night when I made them until Saturday when they spoiled.

I could never get on with Almond Flour..you did great Amber for trying. Try another kind maybe.

I feel like the recipe should have called for a little more flour than it did. Almond flour is different, but I've been getting along well with the exception of the cookies.

Yes, honestly I think I might have put the cookies in a ziploc bag too soon. They weren't fully cooled, but I was impatient. I will be trying some different recipes with the pumpkin. I'd like to make pumpkin waffles or pancakes, and maybe a pumpkin loaf.

@LadyDuck These were fully cooked, but they were still soft. I used three cups of almond flour because that is what the recipe called for. It also called for a 1/2 cup of pumpkin but I think I could have used less of both.

@ScribbledAdNauseum If they are not fully cooked you can put them back in the oven for some additional minutes.

@moffittjc Getting on the keto diet cut all of that in half for me. I still get hungry but honestly I could go a full day without eating and eat only one medium sized meal.

Oh I definitely will. I'd like to get a waffle maker and try some pumpkin chaffles (cheese waffles) that I've seen a recipe for. Goodwill should have one, don't you think?

They weren't really keto, but I didn't like the beet brownies with almond flour I made very much. They never really baked properly and were more like a raw dough. The Keto fudge was so,so.

@ScribbledAdNauseum no regular butter..and peanut butter. I used swerve. I guess it was the beets were too wet. I ate the brownies, but they weren't the right texture at all. The fudge is not delicious like the real thing I made last year..but edible.

@snowy22315 Yeah, I really feel like the pumpkin was too wet and that's why the cookies turned out the way they did. Maybe you could look for alternate recipes with the beets and see what others have done. Oh & mine called for coconut oil too.

Oh, let me clarify.. They spoiled quickly, but were still edible. Not as pumpkin-y as I expected, and I'll use more sugar next time, but worth the hassle of making them.

I think it may have been a combination of things. I probably should have let them cool a little more before I put them in the bag, i think I could have used less pumpkin and less flour (though the recipe called for 1/2 cup pumpkin and 3 cups flour) and I should have used pumpkin pie spice instead of the cinnamon and nutmeg it called for. I'm not sure what I will make next. Maybe i'll try another pumpkin cookie recipe & put chocolate chips in it too.

@LindaOHio Just looked up another one and this one uses both coconut flour and almond flour. It also uses less flour and pumpkin.

The fact that you had to toss them says something. I love anything pumpkin and pumpkin spice related, but as you mentioned these didn't call for pumpkin spice. Maybe that would have saved them.

I guess I should have been more clear in my post. I tossed them after several days. They spoiled quicker than I expected them to, but were still edible. Yes, I'll use pumpkin spice next time and maybe a bit more sugar too.

@Sabasw It's usually the same here, but I'm on a low carb diet and these cookies are low carb as well. I'm the only one to eat the low carb stuff in my family.
