The art of using leftovers.

I´m going to have a pizza for dinner made with leftover mashed potato, a bit of ham, some cheese that will melt, halved cherry tomatoes and spices (oregano and grated cheese).
It will be delicious. I know it because right now I´m smelling it.
It is night already (days are shorter), Luna is fed and soon I will have a happy tummy too.
What are you having for dinner? Do you improvise depending on what you have around?

A pizza with mashed potato sounds a lot more interesting that a pizza on a cauliflower crust.
I used to grill large slices of eggplants to make pizza, after grilling, I topped with tomato sauce, mozzarella, oregano and basil and placed a couple of minutes in hot oven.

Eggplans are always so delicious! I like cauliflower but not as a pizza crust. Cauliflowers are meant to be soft.

@marguicha I fully agree with you about cauliflowers, I cannot see how a pizza crust made with them could be good.

I always improvise with what I have on hand. Dinner sounds good.
I made a tuna pasta salad. I have lots of leftovers for today.
