Chicken Noodle Soup

I like making homemade noodles and I often add carrots, potatoes and corn to this soup. To me, homemade soup means homemade bread, too! Rich soup and fresh bread...what great country food at any time of year."
Original recipe yield: 8 servings
INGREDIENTS
1 (2 to 3 pound) stewing chicken
2 1/2 quarts water
3 teaspoons salt
2 teaspoons chicken bouillon granules
1/2 medium onion, chopped
1/8 teaspoon pepper
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 bay leaf
1 cup diced carrots
1 cup diced celery
1 1/2 cups uncooked fine noodles
DIRECTIONS
In a large soup kettle, place chicken and all ingredients except noodles. Cover and bring to a boil; skim broth. Reduce heat; cover and simmer 1-1/2 hours or until chicken is tender. Remove chicken from broth; allow to cool. Debone chicken and cut into chunks. Skim fat from broth; bring to a boil. Add noodles; cook until noodles are done. Return chicken to kettle; adjust seasonings to taste. Remove bay leaf before serving.

hy.i'm from romania.first i want to tell you that i love chicken noodle soup..i can make a chicken noodle sopu that my mom can't do it like me.
i will tell you how to make it!!!bellive me its awsome!!so...
Soup Ingredients
12 cups water
1 large, clean soup chicken with gizzard, neck
3 stalks of celery, cleaned and cut into 1/2 inch pieces
2 onions, halved
4 carrots, cleaned and cut into 1/2 inch pieces
dill
1/2 tsp. garlic
6 peppercorns
2 T salt
1/2 tsp. nutmeg
bunch of fresh parsley or 2 T. dry parsley
Soup method
In a stainless pot, bring water and remaining ingredients to a boil. Turn down to a simmer, and cook until chicken is tender (2-3 hours). Remove chicken to a cutting board, and bone chicken, discarding the fat, skin, and bones. Return chicken meat to soup. Refrigerate soup. When cool, either discard the congealed fat, or use it for matzo balls. For matzo balls, see below,
Matzo Balls
After soup has cooled (see above), remove the fat from the top of the soup and mix with 5 beaten eggs, 1/2 tsp. salt, 1/2 tsp. pepper, and enough matzo meal to make a loose dough (about 1 1/2 to 2 cups). Refrigerate this mixture, covered, for at least 2 hours or up to 8 hours. During this time, the loose dough will become firm as the matzo meal absorbs the soup. One hour before serving, heat soup to a boil. Form balls of about 1 inch in diameter, and arrange on a plate until all the dough has been used up. Then gently place all the matzo balls into the soup, cover the pot immediately, and turn down the flame so that the soup is gently simmering. Cook undisturbed for 45 minutes to 1 hour.

That is an excellent receipe. Thank you for sharing it with us. Perhaps you would like a variation to that. Instead of the noodles, make matza balls. They are easy. You just use matza meal, an egg, tb.oil, and ref. for 15 minutes. Then form small balls with wet hands the last 20 minutes. Drop into boiling soup and then cover and simmer. It is excellent. You'll enjoy it.

I like chicken soup, I like hot and sour chicken soup. But I don't prefer noodles in my soup.
But I dont mind chicken in my noodles :).

homemade soups are so much better than can soup, I love cooking and making all kinds of homemade food, I used to watch Paula something (the southern lady) on Food Network Chanel and learned alot of homemade soups and stuff by watching her. Soups are always great when you are sick, especially chicken noodle, my grandmother used to give it to me all the time when I was sick, another good thing when you have a sore throat is potato soup, but not with bacon or bacon bits, just plain potato soup with maybe some sour cream and cheese in it, and a little scallions (green onion) there is something about it that just coats my throat and soothes it when its sore.

You are making me hungry. My mama makes the best homemade veggie soup with chunks of beef. Yummy. And she makes fried cornbread, which I slather in butter.
I miss my mama.

I love to make home made chicken noodle soup with home made noodles, carrots, onions and celery plus seasonings. Sometimes, we make dumplings to go with it. They are made like biscuits but instead of baking them, they simmer atop of the broth (soup). I believe bisquick has a recipe for them on their box.

I love to make homemade soups in the winter..mmmmm they just warm the insides and the out...like you have to have homemade bread as well or homemade cornbread...mmmm
