What's cooking for June?

Mylotters, summer is officially here with hot temperatures. And since I'm skipping online meal delivery this month to save money, I've expanded my list to be mega like I've done last year. I've crammed a lot of delicious recipes that requires less time to cook or bake and no crockpot recipes (except for my strawberry shortcake). Good and plenty is what I call this list. Get ready!
1. Mandarin Chicken Pasta Salad (All Recipes)--This is the first salad recipes I've compiled into this recipe list for this month. And since it's going to be so hot tomorrow, it's perfect to make salads with farfalle, cooked chicken, canned mandarins, and a variety of veggies. I plan to make this on Tuesday.
2. Hawaiian Style Garlic Butter Shrimp (Pinterest)--This is one of the seafood recipes I've selected to make this month. This also requires mandarin oranges with jumbo shrimp, pineapple chunks, lo mien noodles, and assorted veggies over white rice. This would be made next Friday.
3. Mango Chicken (Pinterest)--This is the first chicken dishes I have planned to make with diced mango and assorted veggies. This is so versatile: make it spicy, baked or sauteed and healthy with added a grain like brown rice. This is going to be first up to make this month for tomorrow.
4. Strawberry and Goat Cheese Chicken (Pinterest)--This is another chicken dish I plan to make this month. And since I love strawberries, this is a must-have recipe to try with strawberries, goat cheese, chicken, basil, and balsamic glaze from scratch. This is going to be made next weekend.
5. Asian Chicken Salad (All Recipes)--Who can resist a twist on the traditional chicken salad recipe. This one looked interested to try and perfect to have on a hot night with chicken breast, canola oil, and assorted veggies. This will be made in a little over a week.
6. Fruity Pasta Salad with Herbs (All Recipes)--This salad recipe looked appetizing to me with a fruity and herbal mix. Other than cooking tri-color rotini, just add apples, red onions, black olives, basil and mint. Fresh figs is also part of the salad, but I might have to substitute it with dried apricots or buy it from Nuts.com. This will be made later in the month.
7. Mediterranean Chopped Salad Pitas (Pinterest)--This is another great salad recipe I would love to try to make this month and top over pita breads. Unfortunately, I wasn't able to find pita breads at Acme Fresh Markets, so I would have to get it via Shipt at Meijer next Friday to have for dinner. Besides black olives and feta, this has assorted veggies, chickpeas, and dill for the salad.
8. Pesto Chicken Stuffed Zucchini Boats (Pinterest)-- This is a fun and flavorable dish to make for dinner when the zucchini are the boats that's stuffed with yummy goodness. Besides cooked chicken and zucchini, you have cashews, jalapeno, pine nuts, basil, carrots, and cherry tomatoes. Yummy! This is going to be made next Thursday.
9. Grilled Chicken with Strawberry Salsa (Pinterest)--Strawberries and chicken are a great combo for this recipe. And yes, I would try everything with strawberries in it. I'm going to buy Aloha and Wild Wonder Peppers at Meijer via Shipt next Friday since I can't find it anywhere else. I would use a regular eggplant than buying a baby eggplant tree. This is going to be served in mid-June.
10. Pomelo Salad with Rice Vermicelli (All Recipes)--Here's another yummy salad recipe I would be making sometime next week also. Since I can't find any place nearby to buy pomelos, I'm just going to use plain old grapefruit in its place as a substitute. Other than rice, it would have Thai sweet chili sauce, carrots, scallions and cilantro.
11.Grilled Vegetable Pasta Salad (Pinterest)--This pasta dish looked so appetizing by adding grilled veggies to penne pasta. I'm going to use the same eggplant in place of a baby eggplant for this dish as well. Add basil, red onion and penne pasta to complete this salad. This is going to be served mid-June.
12. Soba Noodle Salad with Chicken and Sesame (All Recipes)--This is the final salad dish I'll be making this month, probably toward the end. I'll be buying the soba noodles from Meijer via Shipt also next Friday since I can't find it anywhere. Other than the noodles and sesame oil, I have the chicken and sesame seeds to make this easy salad in late-June.

Hawaiian Style Garlic Butter Shrimp sounds delicious! I'm a big jumbo shrimp fan and the pineapple chunks should really bring out the flavor. Served over rice... perfect You have quite a selection of salads to choose from your list. I'll go with the grilled veggie pasta one. Great suggestions!
