Potato Cakes For Dinner

Another dinner to share with you. Potato cakes. Something I ate growing up, and still enjoy.
If you have leftover mashed potatoes, you can use them with this recipe.
Not a problem if you have no leftovers. Just make mashed potatoes and add as follows:
Two cups of mashed potatoes
1/4 cup flour
1 egg
salt and pepper
Heat a pan with canola oil and butter on medium heat. Brown on both sides. Drain on a paper towel and sprinkle with salt.
Easy and quick! Anything goes with these. You can fry eggs, bacon, and have a breakfast. Or add any kind of meat or sides.
With potatoes, anything goes. I often eat just these potato cakes. Sometimes I add a little sour cream on top. Other times, ketchup.

@CarolDM Oh, my kids would prefer the sour cream too! They are sour cream fiends who would eat it by the spoonful straight out of the container if I let them.

I think we also have something similar sometimes. Yet we might be using some other name.
May be "Pakodas".
They are delicious but well not to be taken in excess or too frequently.

Oh Carol, my Granny used to make the best spud cakes too.
She cooked them in a cast iron.

My mother used to make those when I was a kid, I never liked them..so not sure I have ever had them as an adult.

I love potato cakes! I use mashed potatoes, flour, salt and pepper, and sometimes cheese and cooked bacon. Then after they're browned, I put sour cream on top, very similar to yours.

Oh yes, we love potato cakes. I sometimes would put cheese inside those cakes. And yes, it's good with anything.

These would be the culinary "cousin" of latkes, which I absolutely adore. I would recommend plating these on a bed of spinach, adding a dollop of sour cream, and adding some shredded carrots to top it all off for a bit of a "wow" factor-- especially if serving guests. You could even add a few edible flowers alongside.
