Potato Cakes For Dinner

Another dinner to share with you. Potato cakes. Something I ate growing up, and still enjoy. If you have leftover mashed potatoes, you can use them with this recipe. Not a problem if you have no leftovers. Just make mashed potatoes and add as follows: Two cups of mashed potatoes 1/4 cup flour 1 egg salt and pepper Heat a pan with canola oil and butter on medium heat. Brown on both sides. Drain on a paper towel and sprinkle with salt. Easy and quick! Anything goes with these. You can fry eggs, bacon, and have a breakfast. Or add any kind of meat or sides. With potatoes, anything goes. I often eat just these potato cakes. Sometimes I add a little sour cream on top. Other times, ketchup.

@CarolDM Oh, my kids would prefer the sour cream too! They are sour cream fiends who would eat it by the spoonful straight out of the container if I let them.

I think we also have something similar sometimes. Yet we might be using some other name. May be "Pakodas". They are delicious but well not to be taken in excess or too frequently.

@CarolDM Yes that is the best diet approach. Too strict or lenient approach doesn't works!

I love potato cakes! I use mashed potatoes, flour, salt and pepper, and sometimes cheese and cooked bacon. Then after they're browned, I put sour cream on top, very similar to yours.

I've made them a couple of times with leftover mashed potatoes but I didn't love them. I'd probably use them for cottage pie instead. Latkes, though? Bring on the fried potato cakes! haha

@CarolDM I love potatoes in pretty much any form. (My mother said she craved mashed potatoes when she was pregnant with me! haha) Mashed potato cakes just have never lit up my world.

@CarolDM Would you say they are like potato pancakes or are those? We have potato pancakes at our Holiday of Hannuka which lasts 8 days. I love them with ketchup.

These would be the culinary "cousin" of latkes, which I absolutely adore. I would recommend plating these on a bed of spinach, adding a dollop of sour cream, and adding some shredded carrots to top it all off for a bit of a "wow" factor-- especially if serving guests. You could even add a few edible flowers alongside.
