German Biscuits

During the pandemic I have worked hard. Working with people I would consider my colleagues, though we have helped one another out and worked together to support each others’ businesses.
I have a good friend who is Scottish, and after a conversation where he informed me he was consuming a German Biscuit I asked to see what they look like next time I worked for him. He brought be a pack.
As you can see from the image they consist of 2 discs of shortbread, with icing on the top and a thick layer of jam between the shortbread. This treat is topped off with a jelly sweet - known as a ‘Jube Jube’.
All in all they are very strange and not available in England. I like Scottish trips or working with my Scottish friend as he always brings me a pack!
Have you ever tried German Biscuits? They have a few different names.

I have not tried these at all no.
But of course over here, to find any European delights locally is not usual.
If I want something like that, I buy on Amazon..but then you are taking the risk they may be stale.

@RebeccasFarm I don't think that it would be an issue with them not being too fresh. Shortbread has a long life, but I think once the jam is added this makes them soggy over time.

@Danielclark691 By decent frosting I meant that there is butter in it and not shortening.

I don't think I have had anything like that, but sometimes those sorts of things are available like in Lidl or Aldi. There is a military commisary here that has ties to Germany that has things that you can't get in typical American stores, but haven't been for years.

Nope haven't tried this at all but I think I saw Jim posting this one. Don't quite remember if it's the exact biscuit but I do remember it looks very similar to this one.

They look very good and I like the name "jube jube" for the topper, that is very cute.
