Happy Monday! Another cool and crisp day here in Virginia. Today is actually my birthday, but I did most of my celebrating this weekend. Not sure what is on tap for today. I have some things I could do, but not sure if I want any aggravation on this day. I think I might go into town later, and grab some Chinese also at the place near here.Friend is still here but will be heading home in a few. I guess I will just accept well wishes most of the day...

Thank you! Not too bad Ocean, although as I mentioned in the thread, if I make it again, I will trim the strings so it is more like coconut. Eating those long strands in a pie is a little disconcerting.

@snowy22315 Oh yeah the strands..of course. Thats a good idea to trim them. But it tasted good, main issue. Glad to hear it.
