Frugal(ish) meal: Tuscan Vegetable Soup

Hi and Happy Wednesday! Wanted to try something different and had a few of the ingredients of this soup already on hand, so why not. It turned out good! Maybe a little thin and bland, but I probably should have put more vegetable broth in. I enjoyed the seasonings, sage and ground thyme, which I don’t often use.
Here’s the ingredients (and estimated cost from Walmart near me in Minneapolis, MN)
Makes 18 cups (6 3 cup servings)
2 cans of cannellini beans $2
1 Tbs olive oil
1 large onion diced $.60
4 carrots $1.29
4 celery stalks $2
2 zucchinis $1.59
2 cloves minced garlic
2 tsp dried ground thyme $2.79
2 tsp rubbed sage $3.39
1 tsp salt
1/2 tsp black pepper
64 oz vegetable broth $2.60
2 cups baby spinach $2.49
1/3 cup grated Parmesan (optional)
Total with herbs: $20.35
Total for me with the ingredients I already had (zucchini, onion, beans, and I added some diced tomatoes), total: $14.56 for 6 larger servings
Cook basically like you would any other soup.
I enjoyed but not sure I will do again, I’ve been preferring creamy or pureed soups with a little more filling ingredients. The beans helped though.

It's definitely the weather for some warming soup.
The last few days we had one of my favourites - carrot and coriander.
Basically just gently soften some chopped onion in a little oil, then add some crushed coriander seeds, push around the pan until they smell aromatic, then add lots of carrots, chopped or sliced (whatever is easiest) and vegetable stock. Simmer until the carrots are soft, then puree.
Carrots are cheap - the 'imperfect' ones (which are obviously fine for soup) are about 30p a kilo - so this is quite a frugal dish and it's one of my favourites.

@maezee I tried a new soup recipe last night, chilli bean soup. It was really good! (Can you tell I am trying out a new-to-me recipe book?)
I'm too lazy to write it out but I'm attaching a photo, hope you can read it OK. I didn't have passata I just used some tomatoes I had in the freezer and blitzed it all up, it was delicious and I can't wait to have the rest this evening!
