My Husband Ate the Chili

As part of my diet, I am making some new vegetarian recipes. Today I made a mushroom and black bean chili in the crockpot. Since I have been trying to follow the Blue Zones way of eating for the past 4 years, my husband has not really been game to try any of the vegetarian recipes I have cooked. I guess he must have been pretty hungry tonight because he tried it...and liked it. I served it over riced cauliflower. It was good but I think next time I will add a little less chili powder. Do you know any good vegetarian recipes that are low in carbohydrates? ( no pasta, bread or potaoes)

I am a vegetarian and so all my meals are yummy vegetarian ones. I make nonveg dishes for my husband and daughters. We have tons of vegetarian dishes in Indian cuisine but I am not sure if that would go well with your taste. YouTube will be really helpful.

@TheSojourner Masoor dal... that's what I am cooking today. It will go with hot rice and a mixed vegetable of cabbage, carrot, beans and peas. That's my lunch menu today. You are experimental with your cooking and you must have changed various cuisines to suit your taste buds.

@TheSojourner Okay, that last one sounds good. The only issue I have is that I don' like spicy foods at all.

@arunima25 My issue with some of the recipes is that I don't like spicy foods. Or curry. Anything else I would be willing to try.

@Nawsheen I am not supposed to have carbs or white flour. Do you know of any brands of lasagna noodles that would work for me?

@Kouponkaren I usually go to a supermarket over here where they sell only gluten free products. I usually buy gluten free pastas from the following brands (earth's Joys, Garofalo, Armando

My boyfriend is not vegetarian but he does try to eat less meat. I am very much carnivorous but am actually appreciating some vegetarian food. I know you said no bread or pasta but his pesto pasta today was amazing. Maybe you can make pasta with a different grain they got low calorie ones these days.

@flapiz I can use lentil or chickpea pasta. Does he have a recipe for it or does he just throw it together?

@Kouponkaren I think he just throws it all together Have you heard of Mung bean they are very good for vegetarian. Rich in protein and makes a really lovely soup.

I like vegetarian meatballs, any kind of vegetarian curry I make with apples, celery and bell peppers, lentil soup.

@LadyDuck I eat soup year-round, even in the summer. My favorite kind of soup is cream of mushroom but now I have to make it with almond milk since I don't eat dairy anymore.

The chilli really wounds delicious, I don't eat too many vegetarian dishes I most go by how I feel there are times when I really enjoy just having rice and beans and other times I need some meat like chicken which I eat the most,

@Kouponkaren no I haven't but I will check it out, I have some pinto beans soaking to make with rice tomorrow, I saw online they say it can affect you if the rice is eaten in large quantities and every day and that brown rice is better, But then if we always get upset about things like this soon we might not be able to eat anything at all,

@RasmaSandra Ha, that is so true. I was so careful to try not to eat things that can give people cancer. And then I got cancer. Go figure! I guess we just do the best we can.

@RasmaSandra I LOVE rice and beans but recently heard that rice has arsenic in it. Have you ever heard that?

I sometimes make chili with quorn, a veggie substitute for meat and that is pretty tasty. I don't have a collection of veggie recipes, well maybe excepting veg risotto

Hmm, how about chowders without adding potatoes adding corn, celery & chopped onions? Healthy eating is very good. Glad your husband is coming around.
