Dinner's Ready!

I popped a chicken in the over before I headed outdoors earlier this afternoon. When I came back inside it smelled so good! This will be our dinner tonight along with some creamy corn, green beans and a little leftover mac and cheese.
I was hoping that hubby would bake a cake, but I didn't quite talk him into that. I may mix up a cheesecake and put it in the refrigerator for a late dessert.

We have been eating a lot more chicken which is nice. For so long my hubby wouldn't eat it at all. When he started out in law enforcement, he worked at the parish jail. They ate whatever the cafeteria fixed that day and they apparently fixed fried chicken very often. He is just now getting to where he doesn't mind it anymore.

@LadyDuck That is hard here growing up on the coast. We are all used to seafood, but fish, shrimp, oysters are all cooked fried as well as boiled. With a bit of cajun spice hard to resist!! We have cut way down though since we moved up here in MS. At least the fresh seafood is not as accessible, unless we make a special trip for it or go fishing!

I'm having something tonight that I haven't had before called Moroccan Red Lentil stew with couscous, and I have to thank you because you've reminded me that I've got to plan what I've got to do when, so that all the elements are cooked at the same time and nothing goes cold while it's waiting for the other elements to cook!

@kareng It turned out OK, but there was a bit too much couscous so I will reduce the amount next week.

@Novianping Sure. You could do 395 but I find it dries the chicken out. I use the lower heat and just cook it for a few minutes longer.

It looks good to me. Last night i had a piece of salmon, with some brocoli and part of a sweet potato. Tonight will be pizza, not really in the mood, but I need to make it. I don't really have anywhere to store it.
