Meatloaf for dinner

Nothing beats a good meatloaf. I don't put too much in mine just whatever I have on hand at the time. Had chicken wings today.

I haven't tried to make it in decades, the first 3 times I did they weren't very good and I did pretty much what mom used to do. I wonder if I could make a meatloaf with chicken, hmmmmmmmmmmm.

I made several for the freezer. Mine are similar, but I like cheese or applesauce for variety.

I sometimes make mine with sausage meat rather than mince. That makes quite a nice meatloaf.

I never make it the same way twice. I just wing it. I usually use the same combination of ingredients but I don't measure anything. I use ground beef, eggs, bread crumbs, worcestershire sauce, usually ketchup and some yellow mustard, dried parsley, sauteed onions and garlic, Emeril's Essence seasoning, kosher salt, and ground black pepper. I make a tomato glaze to put on top. The recipe is on the Smitten Kitchen blog and is outstanding.

I have never tried to cook meatloaf at home. Not a big fan.

I made meatloaf last night. I’ve been making it on Monday’s but this past Monday we had dinner at my parents for my fathers birthday so I made meatloaf last night instead. This one had beef and sausage and mozzarella cheese in it.
