I got up at my usual time, but I have been intending to make banana muffins for a while. I have several "portions" of overripe bananas. So I made muffins today.
For a change of pace I added pineapple and coconut to my banana muffins.
I need to make several more types of muffins, I think. It makes breakfast easier.
At school due to state testing my schedule will be wild. Happy Tuesday everyone!!

I have a couple of bananas on the counter that are at that point where if they are eaten today, all is good, but I cannot see me eating 2 bananas in just 1 day.
I am sure that they will become a baked product on Friday or Saturday.

You could freeze them if you don't feel like baking in the next couple of days.

I haven't made muffins in ages and I'd love to make some again. I made raspberry ones and blueberry ones, and they were vegan. I used no butter, milk, eggs or sugar in them and they tasted just as good!

It's been a long time since I have some warm and delightful muffins, and reading this makes me want to get some! Banana muffins are great, but I have never tried one with pineapple and coconut as well.

Those muffins sounds delicious! Making them before hand to saves time for morning breakfast, good idea! For work, you got this! My week, just visit with fixing my apt, so I'll see our handyman tomorrow.
