Blueberry No-Bake Cheesecake

My neighbor has two daughters away at college. They, along with a few friends, visited her and her husband over the holiday weekend. They all left yesterday, returning to college and work today.
She called last night and wanted to share how the weekend went. I invited her over for today. I made this blueberry cheesecake dessert and chilled it overnight. I have made it for her before and she raved about it. A favorite here as well.
Shared cheesecake and coffee with her this afternoon. She shared such happy memories with me about the special visit. They all went out and chose a live Christmas tree on Saturday. Came home and decorated it together.
Her new memories brought back many old ones for me. We shared laughter and a few tears, but in a good way. She is such a good neighbor and friend.
And oh my was the cheesecake delicious. Sharing the ingredients if you are interested. Strawberry or cherry pie filling can be substituted if you prefer. I will gladly message the entire recipe with anyone interested.
1½ cups graham cracker crumbs
½ cup melted butter
8 oz. brick of cream cheese
14 oz. can of sweetened condensed milk
½ cup lemon juice
1 tsp vanilla extract
21 oz. can of blueberry pie filling
Pour ingredients over chilled crust and place in fridge to set for 2-3 hours before topping with pie filling. Topping: Spoon the pie filling evenly over the cheesecake. Cover and refrigerate.

What a wonderful way to spend an afternoon ...with your neighbor and a delicious cheescake. NO-bake sounds really easy.
My granddaughter went back to college yesterday and it was nice having her home. She pops over to visit all the time when she's home and I love her visits even if they aren't very long sometimes.

@LindaOHio I use a 9 x 13 dish. I just sent you the recipe. It calls for either an 8 x 8 or a 9 x 9 dish. It is a personal preference.

@CarolDM We used to go pick wild blueberries with my dad. Now, they don't grow around here any more.

Oh I Iove that! Your cake looks certainly delicious! Its been a while since I last made one. There was a time I used to make no bake cakes at least once a week for a couple of months haha. That was how I loved making no bake cakes. I've done mango cake, Tiramisu, Blackforest, Chocolate and other recipes I've seen on YouTube. Love making them because they're easy to make, delicious and ingredients are mostly affordable.
