Do you follow recipes or make up your own?

I always say I don't like cooking, but when I try making or baking something, it always happens that I don't have some ingredient, or I am allergic to something so I have to replace something. What ends up happening is I take a recipe and sort of throw a lot of alternatives in. Since I am the only one who has to eat it, I don't mind. My most recent thing was making some really delicious gluten-free crackers with only rice flour, almond flour and water (plus a bit of salt). The way I figured out this from another recipe was proportions. I take 2 rice flour to 1 almond flour to 3 water, pour it and spread it out on baking paper on a flat sheet pan, and bake for 15 minutes. I adapted it from a recipe that wasn't much like that but it really tastes good! Today I added fennel seeds and that was very tasty!
So, do you cook by the book, or by your feelings?

I have recently found good Japanese Youtube videos on using rice flour for many different breads and treats! Unfortunately I don't think there is translation, or I would give you a link!

@petatonicsca that would be great.. I am learning what soba is. Is it contain gluten?

@ifa225 Soba noodles usually contain gluten unless they are "ju-wari" (100%) buckwheat. Soba grain does not contain gluten.

It's rare I use a recipe. I have used them, and I altered them for my diet plan, but mostly, I make up my own recipe.

@petatonicsca I think I am. I will put the ingredients together in my head before I put them together. I can get an idea of how it will taste and if the results seem good, I will make it, usually with the expected results.

When it comes to cooking it really depends. If it’s something I’ve never done I’ll follow a recipe but if it’s something supper easy and k don’t really need the recipe for I’ll do as I feel. Not too big of deal. Most of the time I go off of just what I know about food that goes well together.

I think many of us do. Sometimes I cook according to a recipe, and sometimes I add ingredients that I have.
