Not quite a success - cracker biscuits

MyLotter Denise (@pentatonicsca) wrote about making her own cracker biscuits. They are gluten free and made with rice flour and almond flour. You can catch up here: Do you follow recipes or make up your own? / myLot. I loved the thought of making my own crackers but didn’t have rice- or almond flour. I was anxious to try making crackers so I googled cracker recipes and came up with one that used all-purpose flour (which is mostly called self-raising flour here - edit - should be 'mostly called plain flour' here). You can see the result in the photo. They are quite nice but I forgot to poke them with a fork so they have puffed up like mini-scones. We’ll probably split them and spread them with pate when we have our glass of wine this evening. EDIT: Major mistake. All-purpose flour is what we call plain flour but I used self-raising flour which is why they're like scones. I'll try with the correct flour in a day or two. Silly me!

I put poppyseeds, sesame seeds and sea salt. They said fennel seeds as well but I didn't have any and I don't like them anyway so I just went with what I had.

They are not bad at all. The worst thing is that the poppyseeds and sesame seeds keep falling off and making a mess.

They look good, but I would have thought that all-purpose flour would equate to plain flour? That would prevent the puffing up problem.

@JudyEv Sorry, didn't mean to embarrass you but I didn't think anything equivalent to SR flour was available in the USA, they just have regular (plain) flour and add their own baking powder.

I often make mine, with normal all purpose flour, not self-rising, I add the baking powder if needed in the quantity suggested by the recipe.
