My hearty vegan plate

Being an Indian. We have always eaten lots of vegetables over meat and eggs. 90% of our diet consists of vegetables, grains, millets and legumes. Also includes beans, ghee, curd and so on. During the times of my grandmother and great grandmother they had their food like medicine. Whatever they ate, the dals, chutneys, grains etc had a reason behind it for consumption. Also the time and month they consumed certain foods had a great reason like consuming horsegram, raw turmeric, greens during winter. Certain millets in summer and certain in winter. Some herbs and roots as medicine. Now our generation tries to keep the vegetarian roots of our ancestors alive but we are more over taste than health. I still try to cook a healthy home cooked meal everyday for all the three meal timings. I also make sure our food is consumed within 1- 4 hours of time since it is cooked as per Ayurveda. Do you also follow the food as medicine policy? In the picture you can see Yellow lentils dal which is made from 2 types of lentils, Green leafy vegetables stir fried with garlic, green chilli and onion. Radish salad simply made by grating white radish available in season with green chilly and sprinkled some salt. A pickle I made from Mango Ginger that I grew in my terrace garden. This pickle stays fresh for a year.

I can’t eat spicy either. The green chilli that I get here is extremely low on spice and it will only get a tinge of spiciness. It truly was a wholesome plate.

@spiderdust Trust me they really taste very good and they are just stir fried with garlic and then some salt I added onion this time but that’s not even required when you have burnt garlic bits

This plate looks great, I would love to eat everything on it. I have to admit that the older I get, the more I want to eat vegan food, not because of my beliefs, because I eat meat, but my body demands it.

Trust me that I do feel that. Our body easily digests with vegetables and lentils than meat. Meat takes hours and hours to digest and leave our body. Meanwhile, anything plant based is so easy on stomach, soothes our system and also makes us feel lighter.

This is no simple food. This is heaven on a plate. Such a staple food. No matter where we go or how much we gorge on rich food after one point our souls crave this. Wow, you make three meals a day that's truly awesome. You are growing ginge5r and mangoes !! You truly are blessed. Enjoy this meal and keep sharing

I'm mouth watering here by reading the mango ginger pickle. I love that . I enjoy simple vegetarian dinner sometimes .

Your veggie dish looks really delicious. I'm on veggie diet twice a week. I have beans, pumpkins, onions, tomatoes potatoes, tofu and some other vegetables.
