Our love affair with pickles

So its the another summer of my life here in India.
Being an Indian, summer means mangoes for us. we wait for a whole year for this mango season to arrive and when it arrives voila boom what you see everywhere is only the mangoes.
we store those ripen juicy and sweet mangoes as much as we can and eat them when the mango season has gone and gift the mangoes to our friends and loved ones because we have the privilege of having a mango tree in the garden of our house and almost every Indian house has a mango tree.
we are so much obsessed with the raw mangoes(unripen and green in color) also that we make spicy pickle out of them in huge quantity and preserve them for a year and enjoy eating them until the next summer comes where we would make another batch of the pickle and store it and the cycle repeats.
so today it was the day of the year where we make the traditional mango pickle loaded with salt, Indian spices(a lot of different flavored spices), tons of oil to preserve them for longer time and after preparing them I stored them in a jar and kept them under sunlight for the next three days.
for the non Indians wondering I have attached a picture so that you can get an Idea and trust me guys it gives a blast in your mouth when you have them with its sour and spicy taste and it goes as a perfect side dish for almost every Indian dish out there and its similar to the Korean kimchi we could say or maybe way better than them.
we Indians love our pickles and never forbid ourselves from showing our love for them. haha.

Wow. The picture is so inviting. I love mango pickles. They are a perfect combination for curd rice.
We have three mango trees at home. We are collecting the raw & tender mangoes that are falling every day. We are planning to make a pickle tomorrow.

I love tomato pickle too. we Indians can make pickle out of anything and enjoy them. haha.

@rainbowsalt We are fond of such side dishes that enhances the taste of every meal. And these spicy pickles go so great with curd rice, paratha... even the talk of it makes my mouth water
