Alfie made delicious chicken adobo

Alfie and her son will be staying with us until my husband returns on Thursday morning. She was our housekeeper for some years and helped take care of my eldest daughter until she was about 3 years old. We sent her to high school and college while she was serving our household, and we let her go when she finally graduated with an associates degree. She's worked a few years before settling down.
We would often ask her to stay with me and the girls whenever my husband would go on a business trip. I'm glad she's always willing even though she lives far and had to commute with her son.
I taught her how to cook several dishes when she was younger and now she cooks really well. Today I asked her to cook chicken adobo for lunch. I make a mean pork adobo but my chicken adobo is not in any way spectacular. Oh, but Alfie's version of this dish is astoundingly delicious. I ate two pieces of chicken and a cup of rice. I asked for her recipe and will have to try it myself soon.
For tonight's supper I'll be making daing na bangus (marinated milkfish) and sauteed chayote and carrots with ground pork. What's cooking in your kitchen?

It's nice that Alfie is able to stay when your husband goes out of town. I had a piece of leftover pizza. Enjoy your day.

I watched a YT video of a friend making chicken adobo. It looked delicious.
I made four cheese noodles with ground beef for supper tonight. Pretty and I like it.

@almostoveryou My friend told me that when he is able to come to the US, he'd make chicken adobo for me.
So does my daughter. (Earlier this evening, I asked my daughter if she would make something for me to eat and she told me she hadn't eaten her four cheese pasta yet... so I ate it... Later, she came into my bedroom and asked what happened to her noodles and beef.... I told her it was delicious. She called me a selfish old man. I was hungry! )

That is awesome. You taught her how to cook and now she is cooking for you. I have never heard of this meal but from your explanation, it sounds delicious.

Yes, it is indeed awesome. She has gone a long way in terms of cooking. I hope you get to try adobo in the future. It's a popular Filipino dish.

@almostoveryou We first need to soak these for 8 to 10 hours or overnight and boil them and after that can prepare these as per our choice
