Anyone for black bread?

Recently, I wrote about our experience of ‘fine dining’ in France. I thought I’d share this photo with you all which was taken in the same restaurant. We were served these different breads including one that was black. I might have written about it before but I think it was on a different site. At least that’s what I’m hoping. The black colour comes from the ink from a squid. I don’t remember the taste as being any different but the colour was a surprise. I wonder who first thought of using squid ink to make inky black bread.

@JudyEv Oh yes, the French are great at their breads.

If I lived in France I'd live on bread and butter - and maybe a bit of cheese from time to time.

I'd try it although it is not the most appealing bread I've run across.

That black bread does look very different from pumpernickel which is what I've always called black bread.

It has a blueish hue to it probably from the squid ink used.

@rebelann Yes, you're right. It's really more a very, very dark blue rather than black.

To me, this was jet black. Different to any of the dark breads I've seen here.

We use squid ink for cooking in Italy, usually to prepare a risotto or spaghetti, but not bread. I feel the fishy taste.

@JudyEv - What a gorgeous color bread. One of our daughters and her family just returned from Paris and a one-week cruise to Normandy on the Seine. I will have to ask her if she had any black bread on their trip!

@JudyEv - Yes, I agree. I think I could live on bread and butter there, too! How do the French women stay so thin with so much delicious food around them all the time?

Nope, not having any... nuh-uh... I like my bread white and fluffy, unless it's cheese bread, then it can be yellowy orange and cheesy. Oh, and egg bread... that'd be yellowy and eggy.

Ah, I thought it would be squid ink! As long as it's not burned . I've had it in pasta - but never in bread.

@JudyEv I've watched too many cooking shows . Interesting color - striking and strange - but I don't think it does much for the taste, right?

@much2say As far as I can recall, the taste wasn't affected much, if at all. But it was a long time ago.

I'd never heard of it being used in anything! Since then, I've seen it a time or two - the pasta that is.

That does not sound too good. Latvians make what is known as black bread or in Latvian rumpjmaize and most people in Latvia buy and eat this bread. It certainly had not squid ink into,

I'm not sure I I posted it here years ago. But I had black burger. The bun was as black as coal. And yes they used squid ink. The taste was no different from a regular bun or probably I just couldn't tell. But it was a delicious hamburger.

I am one of those people who use more than just the sense of taste when I enjoy food. I also use the scent of smell and sight. I would not be prone to try something so dark, as it doesn't appeal to me.
