Low Calorie Pancit

Pancit is Filipino dish. Its main ingredient is noodles that it is either made of rice starch or egg starch. Today, I made a low calorie and low sodium pancit. I used shiratake noodles with thinly sliced pork belly strips. Cabbage, carrots garlic, a dash of pepper with mushroom sauce and a spoonful of oyster sauce completed the dish. I had my wisdom tooth extracted last Tuesday so I was a bit down for not being able to eat what I wanted. So now that the pain is not as bad as it was in the last two days, I am eating what I have been craving for.

Ouch about the tooth. But I love pancit. Haven't had it in years though.

It's wonderful that you found a way to satisfy your cravings while still being mindful of your health, especially after having your wisdom tooth extracted. Been there too.. my impacted wisdom tooth! I only eat lugaw(porridge) for 2 weeks.

How did you like it with the shirataki noodles? I know the texture and taste is different from the regular pancit noodles. I remember what it was like to get those wisdom teeth pulled out - glad you got to satisfy your craving!
