What's for dinner? I'm looking or simple easy but fairly healthy ideas. Nothing I have to cook for the next week. My son sent me home with extra tri tip he barbecued last night so I'll have it on butter lettuce with some mozzarella. I'm out of tomatoes but might add some pumpkin seeds. What is your to go to when you don't feel like cooking or prepping?

We usually have chili or corned beef hash if my daughter doesn't feel like doing something else. Or, occasionally we order out.

Refried beans smeared on a tortilla with cheese then heat it up. Lettuce if you have it.

Sounds delicious. I haven't had refriend beans in years. I used to make dip with cans.

@noni1959 Refried beans are a form of instant protein.

@sallypup I have to find them that are not full of lard. It may be a good to get some in my trailer while we are in a deep freeze.

Tonight my husband and stepson will be cutting up another deer so I need to be in the kitchen as little as possible. I’m thawing out some homemade soup my husband made last month and will pop some premade buttermilk biscuits in the oven to go with them. I think I will start on some crockpot macaroni and cheese for my daughters and I who don’t eat the soup. I’m also making a Cherry-almond sugar cookie cobbler at some point if I get time. I have the cherries thawing.

Oh, wow. That all sounds so good, especially the sugar cookie cobbler. I haven't have anything sweet in about four days and craving.

@noni1959 it was quite good warm I can’t wait for it to chill overnight and see how it is when it’s cold tomorrow. Almost all desserts I think taste better after being chilled.

It sounds like a nice easy supper. I had turkey leftovers. Thanksgiving leftovers are almost gone now.

It was. We didn't do a turkey so I'm eating my son's leftovers or what I have frozen in the freezer.

In India when we don't feel like cooking we make kchidi which is boiling, rice, lentils and vegetables together with salt and turmeric and having it with butter or ghee( clarified butter).

My dinner is an experiment I want to try. I am not sure though but interested. I bought all the ingredients and supplies in case I do encourage myself to try it. It's a bit or more of the unhealthy side but when I saw it on a video, it looked good. It's noodles with corn and chips lol
