Risotto for lunch - what's not to like?

Yesterday, the development company that created our village held a farewell luncheon. Now that all the houses have been sold, control will pass to a Board of Management made up of residents. We were greeted at the door with either champagne, orange juice or wine. Trays of nibbles were passed around by wait staff before a few speeches were made and we were then treated to a risotto (correction - it was paella) lunch. There was a choice of vegetarian, seafood, lamb, chicken or beef. Later, individual pavlovas, lime cheesecake and other goodies were offered as dessert. The chef, Miguel Maestre, has hosted various TV shows and was well-known by many of those at the gathering. Because we don’t watch much TV, I’d never heard of him but he has an impressive resume. The photo was taken by Vince and shows Miguel putting the finishing touches to one of several big pans of paella.

@vandana7 We had Chinese last night - chicken with cashews, prawns of some sort and a beef dish with a dish of greens (beans, peas and asparagus) and boiled and fried rice. All very yummy.

@judyev A good risotto is to die for. Lovely having it made by someone who knows what he's doing because it can go horribly wrong.

I'm a bit embarrassed. It was paella, not risotto. I've heard that risotto can be difficult to make.

There was an official photographer and the ladies were lining up to have their photo taken with the chef. Most knew of him from his TV shows.

We did indeed. The food was excellent and, although it's been really hot lately, the weather that day was really pleasant.

I made a mistake. Risotto is a traditional Italian rice dish but this was paella.

My goodness, this is impressive Judy! Look at that guy..I think he looks as if he knows what he is doing. Good for Vince getting this excellent photo. I am so glad you had a fine feed now. And that all the houses are now complete. And glad you found a lovely place to reside the two of you.

Thanks. I feel much happier about being here than I did a year or two ago so that's a good thing. All the ladies were lining up to have their photo with him but, as I'd never heard of him, I gave the photo a miss. The official photographer was taking lots of photos so Vince just took a few.

I like risotto, but when it is prepared in large quantities it is never good, all the time overcooked.

@JudyEv A large paella is great and the rice remains "al dente" even if made in large quantity. I made a small paella last week.

I made another mistake - it was paella. More appropriate to a Spanish chef than risotto which is a traditional Italian rice dish cooked with broth.

Egg on my face. It was paella, not risotto. I understand risotto can be pretty tricky to make.
