I Don't Always Do It the Same Way

For dinner last night I just made up a batch of Gorton's beer battered fish filets. They come out crispy and good and are quick and easy to make. We had a salad on the side and I even made some homemade tartar sauce. Nothing special. Just a combination of pickle relish and mayonnaise. Or, in our case, Miracle Whip since we never have real mayonnaise in the house. It's a bit zingier, but still delicious. To top it off, we love Spanish rice around here so I made a batch of that. I don't always do it the same way. But it generally always comes out VERY similar. For this batch I just melted some bacon grease, then added in some chopped onions and fried that up a bit. Then I added in the raw rice and browned it before adding a cup of beef broth, another cup and a half or so of water and 2/3 cup salsa. Simmered it and covered it like normal. Delicious. What went on your dinner table last night, and how do you make your Spanish rice when you make it?

@nela13 I love omelets. My favorite way to eat eggs. Unfortunately, I suck at making them at home so I tend to go for scrambled. lol

We had a "bowl" type dinner. It is inspired by a fast food dish but better. Taco John's sells "Potato Oles" which are tater crowns topped with various things like meat, cheese, guacamole and salsa. I do not even remember what goes in theirs. I had made a cheesy dip earlier this week with Rotel tomatoes and black beans in a cheese sauce that had melted cheese loaf kicked up with some extra cheddar and pepper jack. I used lean ground beef to make up "taco meat" . Both were put over tater tots. We then added chopped onion, salsa, chips to finish it off. It was "use what we have" my sour cream had gone bad and I did not have any guacamole. It was very tasty. My Spanish rice often involves Rotel, and whatever broth I have. Sometimes also bell peppers and onions.

@porwest During the week I eat breakfast and lunch and on Saturdays lunch and a meal not in the evening but some hours after I eat lunch. I eat meat for lunch and when want milk products have to wait till I can eat them after the meat. I really do not have a main meal.

I remember my mother making Spanish rice; and it always had a tomato base. I had a DQ Chicken Strip Basket - chicken strips, fries, Texas toast....Yum! Have a good day.

Yeah, you can use tomato sauce, and I think most recipes call for it. I like to use salsa because I tend to like the added ingredients and flavor it offers.

We did "taco salad" last night! Although we eat all kinds of rice here, I normally do not make Spanish rice - I don't know why. I use a rice cooker since my rice never comes out good over the stove .

Your dinner sounds delicious. I have never made Spanish rice but have had it in restaurants. I had a pork sausage patty with BBQ sauce and some tater tots,

Spanish rice is so easy to make. I like to think mine is better than most restaurants since I add more things to it and it's more tomatoey (if that's even a word, lol). I like what the restaurants serve as well, though.

I haven't made Spanish rice in quite a while. My son doesn't care for it for some reason, but he loves rice other ways so we have it regularly. I love fish, especially baked. Sounds just fine to me! I made my Grandma's old fashioned salmon cakes. We love them, and I need to have them more often. We had broccoli and baked potatoes, easy and good.
