Breaded fried eggplants for dinner.

I think that fried breaded eggplants are about the most exquisite food you can eat.
I AM partial to eggplants but this beats all!
I had 2 rather old eggplants in my fridge. I was going to make moussaka but I never did it and the poor eggplants started to get wrinkled.
Today I decided to make something out of at least one of them to have a better lunch for Anita. It was delicious!
And this evening I checked what the TV was showing and they had on Julia and Julie with Merryil Streep as the American chef Julia Child.
Watching so many delicious dishes made me hungry. And the other eggplant was on the kitchen counter, almost yelling at me! So I got up, breaded it and fried it. Bon appetit!

@just4him There are many dishes you can do with them. They are quite different one from the other.

the egg plants look awesome. In Calcutta a dish of brinjal is cooked called baigan ka bharta. It tastes good and is eaten with chapatis

@marguicha thanks Marguicha brinjal is called begun in bengali. There is a dish like smoked brinjal with onions and chillies it is called begun pora. It tastes delicious

Yes, I like eggplant. I first learned how to fry brinjal from my mother-in-law and that recipe turned out to be very tasty.

@wolfgirl569 I ate my first eggplant when I was an adult. My mom did not cook them. But I first ate them in the Greek moussaka. Yummy!

I love fried eggplants and I love eggplant parmigiana but have not had any in ages, When I have made fried eggplants I have dipped them in egg and breadcrumbs and fried them in salted butter,

They are delicious and easy to make. Yesterday there was some beaten egg left when the eggplants were frying and I added it to the skillet. It was delicious as the egg had an eggplant taste.

@Marilynda1225 The last time I spent hours in the kitchen was when I invited my brother and SIL for dinner. I had a giant fish with the most incredible shrimp sauce that I have ever tasted. I got the sauce from a wonderful cookbook. I thought that I would not mind working so much as I would certainly have leftovers. But my brother ate 3 helpings and it was all gone. And they did not invite me back. I learned then.

My wife likes to cook eggplant called eggplant balado. That's what it's called in my place, maybe it will be a different name in your place. it tastes good, but I don't know how to make it.

I love eggplants. I cook them in various ways. Sometimes just steamed, sometimes fried them with garlic sauce. Fried eggplants stuffed with fish paste is also a popular dish here.

I even cut thick pieces of eggplants to add to stews. Not only they are good but they make the sauce much better.

I enjoyed that film, although I liked the 'Julia' parts best, I could have missed out the 'Julie' parts if you see what I mean.
My favourite has got to be Baba Ganoush, it's absolutely divine. This is one recipe although there are variations of course;
Baba ganoush is a smoky aubergine dip made by cooking whole aubergines until blackened on the outside and softly steamy on the inside. Great for dipping.

I love Baba Ganoush and make it sometimes when I have guests. But breaded eggplants are the sort of food to eat alone.
