Yummy dishes

My back really isn't better, but for some reason a muscle relaxer helps more than NSAIDS. So a short break from pain has allowed me to do some cooking. A couple of days ago I cooked a beef pot roast (got it on sale...isn't it awful how expensive beef is now?!) It was sure good, though with gravy from the drippings from the roast, Bob Evans mashed potatoes (almost as good as home made and a whole lot less work), and a broccoli casserole. We had the leftovers the next day. I have a pork loin in the oven with some baked beans and we'll have the last of the potato salad I made recently. I don't usually make good potato salad, but this was delicious. I boiled white potatoes in small chunks, shredded carrots, chopped sweet pickles and celery, boiled eggs, mayo, a little onion powder, salt, pepper, mustard, and of course a little sugar. I wish now I had made more! Finally felt up to baking two loaves of gluten free bread for Dale, so I'll slice and wrap them for the freezer when they're cool. So, I've cooked more lately than I have in a while. Waiting now for Medicare to approve the ablation procedure on my back. Have you all cooked something really yummy lately? Or maybe a favorite restaurant you've visited recently?

I'm sorry your back is bothering you so much. I hope the procedure is approved soon. Everyone makes their potato salad differently! My MIL made the best; and no one has been able to duplicate it. Have a good day.

@1creekgirl I think mustard, mayo, vinegar, potatoes, hard boiled eggs, celery. Her quantities were always spot on.

Beef prices are through the roof! I don't see how some families are feeding their family if they have 4-5 kids to feed! We have been eating out more than usual lately with all the running around and doctor appointments. I think the last thing I cooked was spaghetti sauce and pasta. It was better when the leftovers were served with the seasonings all more vibrant.

I made a Tex Mex fish this past week. I actually made it in the microwave..although it is usually an oven dish. It was very good.

@1creekgirl You use picante sauce (or salsa) onions, black olives, cheese and that is about it. I make another one that you use salsa, crumbled torilla chips, avocade and sour cream. Both of them are very good. Of course you need white fish, any type of white fish will do. I used Haddock the last time.

@1creekgirl I can bake most things in the oven. I've had to do that when our mic broke and George had to wait until a day off to get us a new one. I know what you mean, not having one isn't fun.

Beef here is so expensive that I do not buy anymore. If they want to convince people to stop eating beef, they are finally succeeding. I made a Chinese orange chicken that was a lot better than I usually do.

I can honestly say that I have never ever made potato salad. Of course my hubs and I do not like it, so that is the main reason. I'm glad that yours turned out so well. The supper that I made last night was delicious. I baked some large chicken pieces low and slow for the afternoon and then added some dumplings to it. I love comfort food like that.

I'm glad you found some pain relief. I have been told to take muscle relaxers but won't due to getting sleepy and zoned out when I take them.

That's very similar to mine, except I don't put parsley or onions, just a little onion powder.
