Comforting Easy Day

I've been on the go so much, I decided to take my time this morning. Sat in my PJ's having coffee with no place I had to be. After cleaning up and dressing, went for a walk. Came back, made some coffee and sat outside getting some sun finishing up my book, "Adam" by Ted Dekker. Cooked six tiny thin sliced eye of round steaks in the mini 1.5 qt crock pot with two cans of diced, spiced tomatoes and at the end, sliced the meat small, and added a can of black beans. Portioned it out into three meals. I'm not a drinker but one of the wineries I stayed at had a delicious dessert wine called, "Boomer Run." It has vanilla notes with a touch of almond. Decided to open it for a glass to have with my meal. I'm not a wine pairing type person but it was good anyway. Ate half the piece of bread. Just a good comfort meal for dinner. Went for a nice walk. Listening right now to the birds chirping. Everyone has been seeing bear and what do I see? A wild bunny. What's your easiest meal to fix when not wanting to use dishes/pans?

It sounds good to me, I love using the crock-pot. I've never really thought about an easy meal not wanting to use dishes and pans. I do have a dishwasher and I use it, maybe that's why. I also make some meals to freeze, so there are days when I just pull one out of the freezer and heat it up, I like the ease of that when we have busy days. Flowers, a walk, and a wild bunny. Sounds like a nice, peaceful time to me!!

I've been in my travel trailer since the end of March last year. I sat for seven months from Sept. and then left the end of April. When on the road, I have to minimize. I like to make up extra to freeze or eat up through a few days. Sure beats fast food when don't want to cook.

@MarieCoyle It can be stressful when things break or leak. It's hard for me to fix. They aren't made to live in full time so will wear out much faster. I'm hosting in a state park now. Began Monday. Nice to sit for the month.

@noni1959 I am not a fast food person, either. I would do the same as you are doing, just make things I enjoy and freeze the extra or eat it up. I've often thought about full time travel trailer living. I think in a way, it would be fun, and in a way, possibly stressful for me...at any rate, it's not in my plan, I need to be here for now. It would be fun to have one for weekend getaways, for sure, but as that would require hauling one around, I would have to pass. I used to do that, we had one back in the day--but I just don't want to try to manage it now. Good for you for pulling it off and getting to be where you want to be.

I have too but so odd to see this one in a state park in a forested area. I'm bummed no bear yet. Only saw one deer.

Some meals make wonderful comfort meals. That bunny looks very dark for a wild bunny. We would very occasionally see black, ginger or white bunnies but mostly they were brown.

Most the bunnies I see here are the same color. I'm unsure what they are called though. So odd to see them but this part of Washington is a wetlands and lots of food for them. Deer and bear too. They have jackrabbits and hare in the more eastern and less forestry areas.

@noni1959 We saw hares in Ireland and they have them in our eastern states but we don't see them here.

What a beautiful photo that is..so peaceful. I am glad you had a great day..sounds lovely. My easiest meal is ground beef with potatoes in the fry pan and some spices and a few veggies..quick and done in around 20 mins.

It sounds good. My easiest meal without pans and dishes is a sandwich. Usually, almond butter and jam.
