Cooking potatoes with the skin

I prepared potato and dal curry today but I did not remove the skin. It was sheer laziness as the maid is on leave. But I consoled myself as I understand potato skin has nutrition. One can easily rmove the skin while eating. As a matter of fact many items that have skin should be consumed with the skin but since it has never been done in my childhood I cannot acccept it. I eat the potato skin of the potatoes I grow in the garden, not those I buy as the pesticides they use could penetrate the into the skin.

They are supposed to harvest a week after pesticides are used and I suppose we need to trust them.

@LadyDuck There are contact and systemic pesticides and both lose their strength after about a week. I worked for this multi nartional company (Swiss) who besides other products also manufactured agrochemicals. There are fruits for example that we eat with the skin and it is expected that they are harvested after that minimum period of 7 days.

@allknowing Once pesticides are used they remain on the skin of the potatoes. Some pesticides are designed to be absorbed into the skin of the fruit or vegetable to protect it from pests.

Like you said, potato skins are very nutritious. However, it took me quite awhile to think of them as something tasty enough to eat. Of course, restaurants here serve potato skins as their own dish, with chives, butter, sour cream, salt, pepper, and the like.

My logic is that when potato pieces are cooked with the skin the nutrition of the skin will get absorbed and the skin can be discarded while having food. I have never eaten the skin so far.

I really like potato skin, and almost always cook potatoes with the skin on. My mum would always peel them (except for jacket/baked potatoes). The skin is good for you. I don't know when or why I stopped peeling. It's quite possible that I was being lazy! I have discovered, thought, that I prefer them with the skin on. I have sometimes eaten the skins of citrus fruits, and always eat the skin from a kiwi fruit.

@allknowing it's never too late. I didn't tend to eat skin from things as a kid. There are all sorts of foods I've tried (or changed the way they were prepared) as an adult that I'd never even have seen as a kid. I don't know how much of the nutrients are absorbed from the skin but, I suppose, if you're not going to eat the skin then you'll get more from it by cooking it and removing after cooking rather than before.

@pumpkinjam That is exactly what I did today I removed the skin while I was having my food. I will give it a try . May be I can start with mangoes (lol) when they are in season

While having food I will discard the skin as anyway its nutrients get absorbed into the potato flesh. Good you are accustomed to eating skins of fruits Wish we got into that habit as kids. It is too late now

I never peel unless I am boiling them. Fried and baked always has the skin on. I also love stuffed potato skins. For that you bake the potatoes and then scoop out. Then put cheese, meat and vegetables of your choice in it and bake until the cheese is melted.

I have baked potatoes with the skin on. Then it is very easy to take off. I read the flesh closest to the skin is more nutritious.

Baked or cooked I think the nutrition of the skin gets absorbed into the flesh of the potato and the skin can then be discarded.

In some cases I cook potatoes with the skin on and in other situations I peel it. I have always cooked them with skin for potato salad and peel them when they are cooked and warm.

@allknowing I don´t like the skin unless they are very new potatoes. But if you boil them with the skin and you peel them later, you lose less of it.
