Happy Thursday afternoon...

It's 1 PM, Thursday afternoon as I write this post. Another gloomy day with light showers and drizzling. I am back from work. And waiting for the rice to get cooked for my lunch. I will relish it in some time. I am alone in the home and so it will be lonely lunch( I enjoy it at times). I have called my household help in the afternoon to help me with some cleaning in the library upstairs. And when she is here, I will always offer her food. It's been raining since Monday afternoon. After 48 hours of continuous pouring, the city was flooded. We had red alert and yesterday all the schools, colleges and offices remained closed. Yes, we got a mid week break. Some teachers took online classes for High school. Even my younger daughter had two lectures online. The warning was till Friday and it was assumed that we will get back to work next week. Today was the plan for online classes just like Covid days. From yesterday evening the rain slowed down, it's mostly drizzling. And we got a late night message that we will meet physically for work. I am happy. I don't like online sessions. They are not effective with special needs children. Well, I am already in weekend mood as I get my days off on Friday and Saturday. Yay!! Weekend My younger daughter was at home yesterday and kept craving for some yummy food. So, she made this pizza( from scratch) for our dinner yesterday. . It was super delicious. She loves cooking and baking, but with her college, assignments and internship on weekends, she is not able to do it. So, she used this day off to do something that she enjoys. Luckily, we had everything in stock for that. That's the picture of our pizza dinner last night. She made few extra bases and kept it in refrigerator. She plans to make some when my elder one visits for Diwali. It is another ten days of wait. Though she is here only for four days, we are happy that she will be with us for the festival and her sister's 18th birthday that falls in Diwali this year That's all for now. I will move to notifications and try to finish them before having lunch. Have a good time. Stay happy and healthy.

@arunima25 I wish I could have more time to do this cooking adventure. If I could squeeze my time, it will be done.

@Shavkat Hmm... taking out time from a busy schedule is very tricky. Maybe you can keep few hours aside every week for cooking. Just once in a week to start with.

She is very good with cooking and especially with baking. She started it very young and her dishes are VC really good, better and healthier than the outside ones. Making base takes a bit of time and patience. But you can make enough in one go to go for few meals. Can be stored in fridge for a month or more

@arunima25 You're welcome. My husband was home for less than 24 hours. He fell 3 times, I had to call 911 3 times; and he is now in the hospital and from there will go to another rehab facility.

She made the base with whole wheat flour. And we had loads of veggies ( green , yellow and red bell peppers, onion, tomato etc) as toppings. We also used paneer cubes( cottage cheese) and cheese. She has been cooking and baking since the age of eight years. She loves it.

Yes, it was really delicious. Well, many low lying areas in the city are still flooded. Thankfully, we are not. It's quite cold after so much rain and wind.

It is good to know your daughter loves to cook not something we get to hear about these days where youngsters are glued to fast food.

I am very fortunate that way. My daughters have junk food occasionally and they have hobbies like music, handicrafts, cooking, reading books etc. That keeps them engaged and not get addicted to screen. I am happy that way. They love outdoor activities too. They are helpful around household chores too.

That's nice that your daughter can indulge her love of cooking and of course it lets you have a break from cooking.

Yes, it saved me from cooking dinner. I could finish some work writing lesson plans for the coming month. I could sit at a stretch for 90 minutes and finish it at one go. I never get that kind of free time

Sorry the city was flooded, but a mid week break sounds good. Good you could also avoid online classes, I think I wouldn't mind them but it must be very hard with special needs kids. That pizza looks yummy, for real! I hope you had a good lunch.

It's better today..no sun, but no rain either. It's gloomy with some drizzling. We have this kind of weather predictions till weekend. The pizza was really yummy! Much better than the restaurant ones. We conducted online class during lockdown. It was an ordeal for these children and us too. Plus, the parents or caregivers had to attend it with them ..it was a bit draining for everyone.
