Been Cooking Today

Did some food prep today while I have a day off. I like being able to have easy to warm up foods during the week while working in the park. Cooked a lot of lean ground beef and sectioned. Cooked some tacos to freeze. Made a couple chicken wraps for the freezer and now, finishing up a soup with chopped steak, veggies and a bit of macaroni.
It really smells like food in here but only have one window open while the heater is blasting. It's pouring rain and the wind is gusting. I'll smell it all night and wish I didn't do all this cooking.
What food items do you make extra of to freeze or have in the refrigerator for easy meals?
This photo is one I took while down in Oregon visiting last month. It's the Shimanek Bridge that crosses Thomas Creek. It's about 2 miles from where I used to live outside of Scio, Oregon.

That's a gorgeous photo. I've always wanted to see one of those covered bridges. I've been eating cornbread all week rather than letting it go to waste. Its basically whole wheat flour and corn meal so I feel like I'm channeling Little House on the Prairie.

Thank you. I lived near all the covered bridges until March of last year. There is a covered bridge tour in Oregon outside of Scio. If you ever get that way, you will be able to see them all in that location. Corn meal is so good with a bit of butter and honey. Nothing wrong with Little House on the Prairie foods.

The only easy to cook in our fridge is noodles and shanghai.
My mom always prep a shanghai so when she's so busy to cook she can easily fry Shanghai.

What is Shanghai? Shanghai is a type of noodles right? Atleast that's what I know.

Great covered bridge. I used to make large quantities of food; but it never made it to the freezer because my husband would eat it! Have a good day.

I do some of the same things. This week I cooked 5 lbs of ground beef and drained it, bagged it up in ziplock freezer bags, and it's ready for whatever, whenever. It saves time when we are rushed. Today in between appointments, etc. I cooked two big whole chickens, and the meat is all picked off and the broth has been made. After it all cooled off, I cut up all the chicken and bagged it up for different dishes, too. I simmered all the bones and scraps, the broth is finally cooled and strained and ready for the freezer, too. I love to have this all done, as it saves so much time. I do make dishes to freeze, of course, but it's still good to have this done. I saved out some in the fridge to make chicken orzo soup tomorrow, it sounds good to me.
I imagine it's nice to come in from working all day in the parks and know you have a head start on your dinner, that's a good idea.
