My youngest daughter is sick again, so I'm trying my best to feed her foods that are soothing and medicinal as well. Tonight, I'll be making chicken tinola for dinner. Tinola is our most popular version of chicken soup. We sauté the aromatics (ginger, garlic, onions) in oil, then sear the chicken meat, then add enough water to cover everything, and simmer for about an hour. Salt, fish sauce, and peppercorns are used to flavor the broth. When the chicken is tender, we throw in chopped pieces of chayote or green papaya, lemongrass (optional), and chili leaves or moringai leaves. This chicken soup is packed with nutrients + amino acids that can help a sick person recover from illness. I pray that my daughter gets better over the weekend. What's your favorite version of chicken soup?
