Winter is gone and yet the need for chicken broth with an egg soft cooked inside is yet too delicious to forget.
I buy a big chicken breast and cut it in 5 or 6 pieces. That means 6 pots of soup, delicious with just salt and dry oregano leaves. The broth will cook eggs to be put in a big mug and taken to my bedroom to have while I watch TV.
Then the small piece of breast can be eaten in many ways, depending on my hunger and imagination.
I have not bought for a long time a while chicken to roast. This way of using chicken is a lot cheaper and breast is not as dry as if I roast it it.
How do you prefer chicken?

We eat chicken maycways fried which we normally get from town at our local grocery store and barbecue on the grill both are very good

I have a devise that can grill chicken pieces (and other meat) over the gas range. I grill thighs there once in a while.

It is so very good for you the broth..I also read that onion juice is good for you with lemon in it..hot.

I eat a lot of onions. The Spanish tortilla has caramelised onions, potatoes and eggs.

I hadn´t thought of mixing both. Here it is difficult now to buy hens. They are completly different from chicken. And I know some recipes that are delicious with hens.

Dixie has an air fried and she makes her breaded chicken there. I prefer to eat it only once in a great while but fry it in the old way.

@kareng I don´t have an air fryer and won´t buy one. My eldest daughter is a happy owner of one but then she is a health freak. She won´t even eat mayo although she loves it.

I have my chicken boillon (homemade) almost every day now and drink it from a mug. In winter it is perfect as I also warm my hands with it.

Well, I love chicken broth and chicken, and I do enjoy eggs many ways, and in many dishes. But for some reason, I cannot eat an egg as you describe in your soup--I just can't stand it if the yolks are runny. They have to be cooked. I am not sure why, I just can't eat them that way. But it's good protein for you, and I am glad you enjoy them.

If you don´t like runny yolks, let it cook longer in the broth until it is solid. It is delicious too.

I am not really sure why I don't like them. If I made myself eggs to eat, the yolks are cooked through all the way.
