Late Lunch of Cheddar & Potato Soup

We had a late lunch here today. Neither one of us was very hungry so I suggested some soup. I keep a couple of packages of Bear Creek Soup mixes on hand for emergencies when we need to fix something to eat fast. I let my husband choose which kind to make today and he chose the Cheddar & Potato Soup. It cooks up in about 18 minutes, which isn't bad at all. While this soup is easy and fast, it has its drawbacks. The dehydrated potatoes are nothing like cooking up this soup from scratch. To me fresh potatoes are so much better than dehydrated ones. Sounds yummy Campbells has a Ktchen Classic beef and barley veggie soup. It is very good. I had for lunch

My mom used to keep those soups on hand for nights she was tired. But yes, the dehydrated potatoes are lacking. I had crab salad. I’ve made it a lot lately, but I never get tired of it.

@wolfgirl569 Yum, that sounds really good. I got up late. My husband also, but he got up before me. He had a leftover piece of cake with his coffee so I took the last piece of Cranberry-Orange Coffee Cake with my coffee. No lunch today. We will probably have an early dinner.

i've seen the recipe for this soup on Pinterest, it looks interesting, but i just don't know how good would it be to have cheddar in soup

We had "Swiss Chicken" and a green salad and black grapes. The chicken is a leftover casserole. I made a huge pan of it, we ate it a couple of times then I froze it. I thawed it Saturday. We ate some then, some Sunday, and the rest will go in my lunches this week.

I eat only once s day.No breakfast;no lunch.Just a cup of hot;sweet tea is sufficient for me.I take dinner only.And I'm fit.I'm a vegetarian.My whole family is vegetarian.

Right! It's also a cheap meal or appetizer for a meal at under $5. There is plenty to freeze or use for leftovers also with just 2 in the house. It is supposed to serve 8 people.

Today, I didn't want breakfast, which happens sometimes. I had homemade oatmeal with raisins for lunch. It was what sounded good. I usually don't do that. Dehydrated potatoes are...OK...but not my favorite. I make potato soup from scratch, it doesn't take long at all, really. But I know those mixes are really quick. Kind of pricy compared to homemade, but sometimes it's hard to find time for it all, so I do get that.

Homemade soups this winter is one of my goals. You are right, probably much cheaper to make or about the same price. But the homemade version would be healthier without all that added sodium. I usually add more water to dilute that.

Soups like that are super handy, I use them also. Sometimes I will doctor a cheddar cheese soup (Campbells) with potatoes, that is nice also. We did not have lunch today. We did the Breakfast with Santa thing today at 9am, and were just home by noon, and neither of us was hungry, we had so much fun doing the crafts with the twins at the event this morning, that our appetites were waiting until supper.
