What Did You Have for Dinner Tuesday Night?

We had a very late lunch since we were out running errands again today. When we got home, my husband was starving and made himself a sandwich. I decided to pull out the left over red beans and rice with ham cooked with them out and heated that up for a quick fix. I was all set for the day with that being my combo lunch/dinner. My husband had other thoughts. He was hungry again at around 6:30 pm. So I took a package of ground chuck out of the refrigerator that I have picked up at the grocery store this afternoon and mixed up a meat loaf. I fixed some mixed vegetables (cauliflower, broccoli, and carrots) to go with it and cooked them down in a little water with a dash or two of balsamic vinegar. The veggies came out very good. But, I wasn't really focused on what I was doing and only added chopped onions and some seasonings. I usually add bell pepper, green onions and a bit of tomato sauce to the mix. I didn't get any complaints from the hubby, so he must have not noticed. I didn't confess and just let it be. What did you have for dinner tonight? Photo Credit: Pixabay, Public Domain

I don't take enough notice when I'm eating. Vince goes to a lot of trouble sometimes and unless I concentrate I don't really notice what's in and what isn't in the food.

As long as it still tastes good, that is okay!! I guess the meat loaf passed, I didn't get any complaints!!

I guess because I happen to be the cook in the house, of course I know what's in the food. If I am out in a restaurant, I do like to try to deconstruct the dish, especially if it something I am interested in trying to recreate at home.

Tuesday night we had home made hamburger patties, with gravy and mashed potatoes and a side dish of brussel sprouts. I think that ground beef was on both of our minds. Tonight is chicken.

That was one of my suggestions of what to do with the ground chuck, and mashed potatoes or potato salad and veggie, but my husband had already maxed on his carbs for the day. So he got meatloaf and veggies!! We are going to eat out this evening on way back from picking up a part he needs for one of his projects--I think the boat. Its a 2 hour round trip.

@kareng That is alot of driving, stay safe. We are having a temporary tax holiday for 2 months on certain items. I had pizza delivered tonight because it was tax free, and it was only a $13, which is a great price. It was also pretty nice that I didn't have to cook.

@Juliaacv It's not too bad. And we don't go that way (north) often, so the drive is nice. We didn't get home until after 8 pm though. Had another stop added on the way home.

Ah. Meatloaf. I am due for one soon. Out of ground beef, though, and waiting for a sale. lol For dinner I made what I call enchiladas, but of course I make them my way, and not the same way every time. So, let's just call them conceptual enchiladas. lol Had some braised pork steak left so I diced it up, added onions and red bell pepper and cooked it up and then added taco seasoning. Got out the flour tortillas and slathered them with refried beans and the pork mixture. Rolled them up and put them into a 9x12 and poured enchilada sauce over them and added melted cheese toward the end and served them with a dollop of sour cream. Delicious.

I had picked up another package when stopping at the store yesterday because it was the last day of the sale. Ground chuck was cheaper than ground meat. I have several already in the freezer that I picked up last week. Win. Now that sounds like a winning dish! I think my hubby might even like that! Minus the sour cream...haha,.

@porwest Our local store will put the Ground Chuck on sale for $3.99 lb. That's not too bad and much better than $6.99 to 8.99 lb. I never thought I would ever see those prices on hamburger meat! We used to get it for $.99 lb. or even less on sale sometimes.

@kareng I'd like to use a leaner grind, but 73/27 seems to always win pricewise. I did get a good price on some 80/20 not that long ago, but it's rare I find a deal.

I always forget to make cornbread when I cook red beans and rice! My grandmother always served it every time she fixed them! Drats!
