12/17/24 - Meals

93 days until spring. The Mega Millions Jackpot is up to $825 million. That would surely take care of my husband's residence at the rehab facility!!! My husband's 2nd cousin is coming over today to help with my growing to-do list. I spent an hour on the phone with Spectrum and Kinetic/Windstream trying to, yes you guessed it, porter my telephone number to Kinetic. Maybe 3rd time's the charm. They are trying to charge me an activation fee and a month's worth of phone service when I did not have phone service. When you called our phone number, it said not in service!!! This is beyond ridiculous. I still have about 10 calls to make. Breakfast - Pop Tarts Lunch - Meals on Wheels - Sweet and sour pork loin, rice, beets (YUCK), mushrooms Dessert/Snack - Cranberry orange muffin Dinner - Buffalo chicken/Swiss sandwich and 12 grain bread What did you eat yesterday? Yesterday I had a chocolate protein shake, 4 protein bars, and two 5-oz steaks and some bacon.

But you didn't buy a ticket, did you? Hmm. lol Or did you? For dinner, sticking to regular Porwest fashion I made enchiladas, or at least in concept. lol. I had some braised pork steak left, so I diced it. Added in some onion and red bell pepper and cooked it up in a pan and added taco seasoning to make a "filler." Took out some flour tortillas and slathered on some refried beans, then the mixture. Rolled 'em up and put them into a 9x12, poured on enchilada sauce on top and melted some cheese toward the end and voila! Dinner was served and they were deliciously served up with a dollop of sour cream on top. Yummy!
