Easy Spanish Rice

I am sure that there will be elite connoisseurs who will entirely poo-poo my dish here, @NJChicaa being no exception who will probably send my entire idea into the annals of the worst, most vile concoctions to ever have molested a pan, but Easy Spanish Rice is a dish I like to make, tastes great, and doesn't even have to be Mexican culinary expert approved to pass in my book.
Basically, all I do is melt some butter in a saucepan. Then I add in some chopped onion, celery, and this time some red bell pepper. Cook that up a bit, then add in raw rice and brown it. Then, in with some broth (I have some beef left so that is what I am going to use) and about 2/3 cup salsa.
Boil that for the desired time, usually around 10-12 minutes, but it is actually an eyeball operation for me.
Cover and let stand. Like I said, despite any criticisms from the elites in the food world, this is very easy, does the trick, and is very tasty, and makes for one hell of a side dish.

The only Spanish rice hubby and I ever made was the one from a pack of Goya Spanish rice. And that was a long time ago. I think it’s rice with a seasoning packet and you just boil it together. It’s pretty good.

@porwest we usually don’t have salsa at home. We have ketchup. But that won’t work lol.

When I was just married, I cooked a fake Spanish rice with every leftover in the fridge the day before I went to the farmer´s market. It was quite good and never tasted the same. Although your dish may not meet a chef´s book, I´m sure that it is a good and healthy dish.

I haven't made Spanish rice in a long time. Your version sounds good. Makes me think I may should make some again. Thanks for the idea.

I make a similar version, but I generally use a can of chopped tomatoes rather than salsa, and use basil and whatever other herbs or spices we are in the mood for. Often it has browned ground beef in it, which turns it into a main dish, and then you don’t need much else with it. My son loves this dish.
