Sandwiches for lunch today.

Today I made some tiny chicken and mayo canapes for lunch. I had divided the chicken in pieces. One that included thighs and part of the breast will be heated on Friday when Martin comes. Then there is some breast that will be prepared for a couple of shepherd pies for Anita and for myself. Finally, there is the leftovers that include odds and ends, bones and bits of meat. I picked some of the meat, mixed it with homemade mayo and put it in tiny buns to eat as canapes. I´ll finish now picking the bones and then I´ll leave the rest for a soup for Luna. She loves those snacks.
A roasted chicken goes a long way. At least if you live alone.

I agree. And you can use the leftover roasted chicken to make new dishes.

@lilacskies Tomorrow Anita comes. She´d have to help me make lunch with another part of the chicken while I go to the dentist.

That sounds delicious. With my groceries, I got some hard rolls and some bologna and ham, This afternoon I felt like cutting a hard roll in half and putting on bologna on both halves and topped with American cheese. Then I put the halves into my toaster oven to melt the cheese. I don't know how they are making food these days but after the sandwiches were so salty I could not eat them, But I still have my chocolate cake,

In my country it depends on the brand. So I know my favorite brand. Even as ham goes, there are some brands too salty and too spicy for my taste

@marguicha I can't believe how our portions have become so small. When we see what others eat sometimes, we are quite surprised.

I get a lot of meals out of one whole chicken, and make a broth with the bones and bits. If I don't use the broth right away, I just strain it and freeze it until I need it. I much prefer homemade broths to the ones you buy at the store. It's so nice that you share with your sweet Luna.

I haven´t bought broths at the store for many years. They are expensive and not so good. I don´t buy mayo either. I prepare my own.

@MarieCoyle Although I have never been able to turn the dishes into art works, all the food I make is delicious and healthy. I learned early how to cook and as I age I have started to cook with less spices. The jams and marmalades I cook only have fruit and sugar.

With prices being what they are, I am extremely thankful to my grandmothers for teaching me to cook things from scratch when I was a child. My favorite aunt helped with that, too. Our meals are far from gourmet, but they are tasty, filling, and as good as I can make them. I've never been fond of ready-to-eat stuff from the grocery--even if it tastes good, it's always full of preservatives and sodium and I can make it for a lot less than they charge for it at the stores.
