Chayote Squash

Yesterday while I was in the produce section I saw these squash. I had never seen these before and was clueless as to what they were. They look like they have a mouth and this through me off a bit.
My son loves to try new things, so I decided to buy two of them. I cooked them last night. They definitely tasted like squash. I roasted them with olive oil and ate them with salt and pepper.
Have you ever had this type of squash ?

They tasted exactly like other squash that we have had.

The look of it kinda made me want to walk past it. Then I saw that it was a squash.

Yes , we use to cook it with pork or chicken soup (tinolang manok in the Philippines)

What a funny looking thing! I don't think I ever saw them, but it looks like something that could show up at a farmers market, next to the kolrabi, another totally weird looking veggie.

One of my favorite vegetables. When I was a kid I detested veggies. But one day I caught typhoid fever, a dish with chayote and ground pork was served at the hospital where I was confined and it was delish. Since then, my mom would prepare this dish once in a while when I was a kid. She hardly cooks it these days. When I got married, I had to learn to cook different kinds of dishes. I often add this to my veggie dishes. Unfortunately, that vegetable is not readily available here in Korea, so I always have to wait for its season to be able to cook it. On top of that, it is quite costly because it is imported from other Asian countries.
