Chayote Squash

Yesterday while I was in the produce section I saw these squash. I had never seen these before and was clueless as to what they were. They look like they have a mouth and this through me off a bit. My son loves to try new things, so I decided to buy two of them. I cooked them last night. They definitely tasted like squash. I roasted them with olive oil and ate them with salt and pepper. Have you ever had this type of squash ?

Yes , we use to cook it with pork or chicken soup (tinolang manok in the Philippines)

What a funny looking thing! I don't think I ever saw them, but it looks like something that could show up at a farmers market, next to the kolrabi, another totally weird looking veggie.

that is common here. I cut them into four and sliced it thinly and stir fry it with ground pork

One of my favorite vegetables. When I was a kid I detested veggies. But one day I caught typhoid fever, a dish with chayote and ground pork was served at the hospital where I was confined and it was delish. Since then, my mom would prepare this dish once in a while when I was a kid. She hardly cooks it these days. When I got married, I had to learn to cook different kinds of dishes. I often add this to my veggie dishes. Unfortunately, that vegetable is not readily available here in Korea, so I always have to wait for its season to be able to cook it. On top of that, it is quite costly because it is imported from other Asian countries.

Never heard of them, let alone seen one before! If they taste like butternut squash, then I'm in
