Slop Casserole, Here We Come

This may turn some stomachs, and I get it completely. But I am telling you this will, nonetheless, be good eats. There is no doubt in my mind. As some might say, "Folks, this isn't my first rodeo." I diced up some onion and threw that into a large mixing bowl. Then some orange bell pepper. I added in some cooked, leftover braised pork steak. I added some black beans, drained. I put in Italian seasoning, garlic powder and onion powder, as well as some salt and pepper. I added in some shredded cheddar cheese and a couple spoonsful of cottage cheese. I added in a can of cream of chicken. Some cooked rice. Some milk. Is anyone puking yet? Then in with a healthy dosing of cooked, white rice. Mixed it all together and put it into a casserole dish. Before I take it out, I will add more shredded cheese and let it melt. This is the dish without the final topping of cheese, but let me assure you, this will be good even if it happens to look and sound like the most disgusting thing you have ever met aside from my 4th of July casserole, which I think may have left some people literally leaving the country. It's good eats. How about you. One, would you eat this and two, what went on your table tonight? I have some buckets in the garage if you are experiencing some dry heaves just thinking about this. It doesn't sound or look that bad, but you and I generally have similar eating tastes/habits. I made sausage gravy homemade this morning with biscuits. And homemade chicken and dumplings for dinner tonight. Last night I made homemade chocolate chip peanut butter cookies, so I'm all baked/cooked out.

It might be part of our frugal nature, and maybe even the fact that we're writers. We like to use things up and we are creative, and those two things sometimes just go well together.

Sounds delicious in theory, but all that dairy would certainly have my stomach turning itself inside out. Ah, well. More for you to enjoy, right?

I did not hear anything there I would not eat. I grew up poor and I wish we had had some of the things you have listed. Of course, holding it all together with cheese is the best.

I wouldn't like the cottage cheese, but I would taste it!! We had leftovers tonight.. meatloaf, round steak, rice and gravy, green beans and mac and cheese.

@porwest Right! Kinda like cream cheese, it isn't noticed most of the time. I could always leave the cottage cheese out

In this dish, you barely noticed the cottage cheese was in there, and it was only a couple of spoonfuls. The dish turned out surprisingly good, though. Not that I had doubts, but when you're kind of flying by the seat of your pants and tossing multiple things in, you never know. lol

That actually sounds pretty good. It’s got a little bit of everything—savory, cheesy, creamy, with some veggies and protein to it.

Oh yum! But I have to ask: How much rice and how do you add the shredded cheese before taking it out?

I use one cup raw, so whatever that yields. Probably about 3 cups cooked. As for the cheese on top, I just opened the door, pulled the casserole out on the rack, and poured cheese on it to melt.
