Great Casserole

This is something I picked up along the way but what is great is you can make as much or as little as you want. You can have it anytime of the day. I will tell you how I made it. I used six eggs, half a small container of cottage cheese, shredded cheddar cheese, and some diced tomatoes, and canned spinach I had leftover. Then mixed all together and poured into a dish and it bakes up solid in about 45 minutes just check. It is great by the slice and I can have it a couple of day heating up some. Best of all it is easy to make and it tastes great. Usually I just heat up frozen food like some seasoned fries and pork sausage patty so now I like it that I can add to my usual menu.
Of course since my groceries came I am also happily having ice cream sandwiches and Hostess cupcakes.

@DaddyEvil it is very good and you can make adjustments like no veggies and maybe some sausage thing like that. Experiment you'll like it, And like with cake always check when taking out that it is solid to cut in slices,

@RasmaSandra I love veggies but I do always put cooked meat in casseroles.
Do you check it with a toothpick or something else?

@DaddyEvil I just stick in a knife to make sure it is all solid and can be cut up.

Thankfully, the price of eggs has dropped by 50% according to news reports. I did notice the lower price in my grocery store. Just in time for those like you who like to bake things. I miss my Mom's Struffoli. She always made it for an Easter treat. They are Italian Honey balls.
Now I can make my Easter lasagna and egg casserole, lol.

I'm not a big fan of cottage cheese; but it still sounds good. When I used to cook I used cottage cheese in my lasagna.
