I discovered a new omelette.

Today I had a giant breakfast before I went out with Camila. When I came back I was tired, got into my bed and took a so long nap that when I woke up I had no idea what day it was. I still wasn´t hungry so I fed Luna, washed a load of clothes and the dishes. And much later I wondered what to eat. I had bought some blue cheese to bake some giant mushrooms I had. Two days ago I took out the stalk and put some blue cheese and butter in the hole. It was delicious. But I still had mushrooms and blue cheese and I had cooked rice just in case Camila stayed for lunch (which she didn´t). So I beat a couple of eggs, fried in butter a thinly sliced mushroom, and mixed that with diced blue cheese and some rice. With all that I made the most delicious omelette. The blue cheese and mushroom gave it the touch of class. I have discovered that you never can go wrong with an omelette. And in my country at least, eggs are still an inexpensive protein. Although not as inexpensive as before, they are as inexpensive as chicken or milk. The rest of the meats are a lot more expensive. And they are healthier than other much fatter meats. Do you love eggs? Omelettes? See you friends. I´ll read a bit. My tummy is still hurting. I hope it hurts tomorrow when I go to the doctor so that she discovers what it is.

I'm sorry you continue to have pain. Blue cheese really wakes up most any dish.

Yes, I love eggs and omletes. I would just add some spinach to your mixture and it would be perfection.

I'm sorry your stomach is still hurting. I hope your doctor can figure out what is causing the pain and get you fixed up without too much time or cost. I do love eggs and omelets with mushrooms even if Pretty complains about the smell of mushrooms cooking.

I hope the doctor knows what it is and helps me with it. We tend to mourn over what we spend on health but it is money well spent. The blue cheese was perfect for the omelette. I don´t buy it too often so that when I have it it is very special.

@DaddyEvil I hope it is diverticulitis (normal at my age) because although it will mean some changes in my diet and even some other things all I can think about today is cancer again. So I´d dance with my bad legs if it is JUST that.

@marguicha I'm not a doctor, but I keep wondering if you might have diverticulitis. I hope not because that's not fun and it can mean a diet change is necessary. It's an inflammation of the lower intestines and causes pain... It can also leave spots of blood on the toilet paper when you wipe after going to the toilet. I like blue cheese salad dressing. I use it in place of mayo on some sandwiches. I've never cooked with actual blue cheese but that does sound really good!

Our local supermarket has now limited customers to two dozen eggs at a time. We don't have bird flu here but perhaps some of our eggs are being sent to the eastern states.

I'm sorry your stomach still hurts. I hope the doctor will be able to help you. I like eggs scrambled, in omelettes, egg salad or deviled eggs. I cannot eat a fried egg.

It’s true! You can never really go wrong with omelettes. There are no hard rules about what you can or can’t add. Just toss in whatever your taste buds are craving or whatever you want to experiment with! From fresh veggies, herbs, and mushrooms to ham, bacon, ground beef or pork, shredded chicken, even fish meat or whatever leftover you have there—anything goes. And of course the cheese (lots of it!), and season it your way with garlic powder, paprika, or even a dash of hot sauce. It’s your omelette, your rules haha!
