Mix whatever you fancy adding a binder that will help make balls and deep fried. Kachori was my faovuirte snack while I was working in the city I used to sometimes go to a restaurant that had some delcious kachoris. I have not had them for a while now but hope to make them myself. I have enough ingredients in my fridge and pantry - green chilies, onion, coriander leaves, scraped coconut, spices, potatoes, sugar salt and maida. Mix all the ingredients, make them into balls and deep fry them. Eat the kachoris with tomatao ketch and do not forget a hot mug of tea to go with it Image credit:

Deep fried foods are bad for my heart. I usually bake or broil.

It is bad for every one but an occasional indulgence should not hurt any one

@allknowing Sounds like a perfect use of leftovers, much like a casserole or soup can be.

Maida is white flour. You can pick and choose your ingredients.

@allknowing - I like fried food a lot, I know it's not good, but once in a while I am sure it does not hurt.

Not easy to get them in South India unless we go to a restaurant that has it in their menu. My wife makes it once in a while.

@Shiva49 Moong dal seems pretty uncommon for a Kachori

It sounds good only I am not into coconut, Perhaps leaving that ingredient out I might like to try this when I have the other ingredients,

You make your choice and coconut need not be chosen.
