What's for dinner? April 14

What's going on the dinner table tonight? Do tell!
I didn't eat much at work today so I'm STARVING. (well not literally but man am I hungry) I took some ground beef out of the freezer. It has been thawing on the counter for the past 2 hours but I'm going to need the assistance of the microwave to finish off that process. I'm going to make a double smashed cheeseburger with roasted mirepoix (carrot, onion, and celery run through a mini chopper). The recipe comes from Alex Guarnaschelli's first cookbook--Old-School Comfort Food. I found a similar recipe on the Food Network site but it is different from the one in the cookbook. There isn't a cheese sauce and there definitely is mayonnaise in the meat mixture. It is close but not the same.
To go with it I will have some extra well-done tater tots. I'm trying to use up some stuff from the freezer because it is absurdly full again. I really need to learn how to cook for 2 at a time rather than 4 or 6.
It is the Italian in me.
I'll have some kind of steamed vegetable (green beans and baby carrots or mixed spring veggies) because I am an adult and eat vegetables.
That's what is happening here. What are YOU having? I want to know!

You’re Italian? I should have guessed with all the fabulous sounding cooking you do.
I’ve been having salads during our mini “heatwave” but it’s back to hot meals, now the chilly weather has returned. Today was a stew done in a slow cooker with mash and a few veg. A very hearty meal.

@NJChicaa Coincidentally I had swede in my stew. It’s a tough old root vegetable that likes it long and slow. Cheap here most of the year, but it’s a bugger to cut up. Used to be used for lanterns at Halloween when I was a kid. Nowadays, thanks to you Americans, we use pumpkins. Less visits to A&E.
