I've finally seen a "bad" egg

I was always curious about what Ina Garten (aka Barefoot Contessa) meant when she said to always crack eggs into a separate bowl in case one of them was bad. I had no clue what she was talking about though I have always taken her advice. Well tonight was the night. I was using some of the duck eggs that a coworker gave me to make the manicotti filling. The first one was bad. OMG. Like green slime came out of it and the shell was fully intact. It STUNK! I dumped it down the sink, threw out the shell, and then wound up putting the garbage bag outside on the landing to take to the dumpster in the morning. (we're classy like that up here on the 3rd floor ) I'm glad I didn't crack it right into the bowl with the 3 cheeses, fresh basil, and fresh parsley. I would have hated to have to trash all of that.

Store eggs are awful. I miss the old days when I knew where my eggs came from and the shells were rock hard.

This was actually a duck egg from a coworker who lives around here. Agree the shells are super hard. This one just happened to be freaky.

@njchicaa if an egg floats in a bowl of water it’s bad; if it sinks it’s fine. Or is it the other way round? I can never remember.

That is what they taught us in Home Ec, but I do not usually do it. Of course mine are mostly store eggs, but my supervising teacher occasionally brought me some and they were very good, and always fresh.
