I'm not sure if I have just one favourite, we make a lot of soup based on whatever is kicking around in the pantr, or leftover soup, but tonight we had broccoli and stilton soup with a littl ebit of smoky bacon in it, and that was really delicious. Tomorrow we are having potato, carrot and courgette soup with hot chillis. Most soup is good as far as I am concerned, except tomato for some reason, I really cannot stand tomato soup though tomatoes as part of a bigger recipe are fine.

I love the thick and hearty type soups filled with lots of vegies or other things. My favorite right now is New England Clam Chowder because it reminds me of my favorite food-which is any seafood

Potato Soup
(The ingredients in parentheses are if you want to make a vegan soup.)
1 T butter (olive oil)
3 stalks celery, sliced
1 large yellow onion, chopped
1 large leek, sliced
1 1/2 C carrots, sliced
6 medium potatoes, cut in bite size pieces
3 cans chicken broth (vegetable broth)
8oz half & half or 1 can evaporated milk - optional
1 T dried parsley
1/2 t ground celery seed
Salt & pepper to taste
Heat butter or oil in stockpot over medium heat. Saute celery, onion, leek, and carrots until browned lightly. Add broth, bring to a boil. Reduce heat, simmer for about 10 min. Add potatoes, increase heat, bring to a boil again. Reduce heat and simmer until potatoes and carrots are done to your desired firmness. Add seasonings and half & half (if desired).
I've never used the half & half - I just put about 1/3 of the soup into the blender, puree it, and add it back to the pan. Makes it nice and creamy without adding dairy. However, this recipe is from my mom, and she prefers it with the dairy and also likes to grate a little cheddar cheese into the soup. So, however you like it!

I love tomato soup...It's just really good. Especially when you put cheese and croutons in it. :)
But, I really love the soup my grandpa makes. I don't know how he got the recipe,I guess he made it up. But oh my gosh, it's always perfect. And it gets better every time you heat it up!

I love Baked Potatoe Soup, Broccilli and cheese soup
1 Tbsp. butter or margarine
1/4 cup chopped onion
1 can chicken broth
1-1/4 cups milk
2 medium baking potatoes, baked, cut into cubes
1/4 tsp. salt
1/8 tsp. pepper
8 slices Bacon crisply cooked crumbled
3/4 cup Cheddar cheese
2 Tbsp. green onion slices
1/4 cup Sour Cream
melt the butter in a saucepan then add the onions; cook and stir until crisp-tender. Add broth, milk, potatoes, salt and pepper; bring to boil, stirring constantly. Slightly crush the potatoes with back of spoon. Reduce heat to medium-low; simmer for about 5 minutes
Use about 2 Tbsp. of the bacon and cheese and about 1 Tbsp. of the green onion for toppings. Add remaining bacon, cheese and green onion to soup just before serving cook until cheese is melted
Before you serve this add the remaining bacon, cheese, green onion and sour cream to the top of the soup in each bowl .

Broccoli-chedder! Cream of Mushroom comes in a close second. I like a lot of different soups, but give me Broccoli-chedder soup with some nice warm crispy outside/soft inside bread and I am good to go.
