Oil is used to pan fry or deep fry something. if you want to fry some fish, fill a pan with about 4 inches of oil, bread your fish and drop it into the hot oil till it is a golden brown, then remove fish and put fish on platter with paper towlls to absorb the oil. If you want to fry up some lamb chops or pork chops, put a little bit of oil in a frying pan and cook till they are done and a little crispy!

canola / vegetable for frying ; olive oil for pasta ; sesame oil for stir frying & noodles.

Well, you didn't specify, so this is hard to answer. When frying, especially deep frying, I'm partial to canola. Peanut is pretty hard to find around here for some reason, and when I do find it, it's in huge containers and is pretty expensive. When I'm sautee-ing, browning, or just need a little oil, I use EVOO, extra-virgin olive oil. I'd love to try other oils, the flavored ones or other nut oils, like walnut, but I just can't really afford them.

With most of my cooking I use Extra Virgin olive oil. It is very healthy for you, even though it is a bit expensive. They do have one I use sometimes that is olive oil and canola mixed (a bit cheaper). The trick is to not heat it too high. I also use vegetable oil to deep fry (occasionally) with.
