vegetarian for Christmas?

Has anyone got any ideas for vegetarian recipes for Christmas? This is my first year having guests over for a Christmas lunch. My husband isn't a vegetarian (I am working on him though : ) and I want to impress what with vegetables and maybe something special and show them that vegetarian isn't boring.

This is a tofu loaf recipe- good luck!
2-3 tbsp olive oil
1 cup drained med-firm tofu
1 onion chopped
2 cloves garlic, chopped
2 tbsp ketchup
2 tbsp tamari or soy sauce
1 tbsp dijon mustard
1/4 cup chopped parsley
1/2 cup bread crumbs or rolled oats
1 tbsp tahini
pepper to taste
preheat oven to 450. oil a 9 in pain w/ olive oil- set aside. blend tofu,onion,ketchup,garlic,soy sauce,mustard,pepper,parsley and tahini- mix well. Put in baking dish, bake 50-60 min. let cool for 5-10 min- remove from pan. makes 4 small servings.

Sure I have a recipe and know of a website which provides many Christmas recipes for a vegetarian. Their categories include: holiday dinner, appetizer and salad, holiday sweets and cookie exchange. Here is a recipe from the holiday dinner section:
Vegetarian Cornbread Dressing
Ingredients:
2 cans of vegetable broth
1 med onion (grated)
2 pkgs Korn Kits or other cornbread mix
5 slices white bread (dehydrated or slightly toasted)
2 eggs or equivalent egg replacer
1 teaspoon salt or salt substitute
1 1/2 teaspoon white pepper
2 tablespoons Poultry seasoning
1/2 teaspoon of celery seed
Directions:
Mix crumbled cornbread and white bread with grated onion, eggs and seasonings. Place mixture in 9 x 13 casserole dish. Pour cans of broth over mixture and bake 30-45 minutes in a 350 degree oven until top is lightly brown. Serve with cranberry sauce for the perfect sweet/salty taste-bud treat.
