You don't say for how many people you cook but here's a site I use for microwave cooking:

All the recipes are geared to one person but you can easily double or triple them.
I like the site as navigation is easy and the recipes are simple and made with easy to find, common ingredients.

Just about any search engine can send you to all kinds of sites for that if I knew what you were looking for I could help you .I know that you can use a cake mix and ice cream cones and mix the cake batter up fill the ice cream cone about half full and either micro wave it or do it in the oven its a big hit with the kids at birthday parties and what have you hope this helps you can also bake potatoes by washing them and cut them down the middle and then put them in the micro wave and time varies from one to the other turns out excellent baked potatoe though.

Rhubarb Sauce I

INGREDIENTS
2 cups diced rhubarb
2 cups white sugar
DIRECTIONS
Stir together rhubarb and sugar in large microwave-safe bowl. Cook on high, 12 minutes, stirring every three minutes. Serve hot over ice cream, or chill in refrigerator until ready to serve.
Millet-Stuffed Peppers

"Millet, black beans and tomatoes are stuffed into pepper shells, and then baked in the microwave oven. These vegetarian stuffed peppers are easy to make and are also gluten free!"
INGREDIENTS
1 cup millet
4 cups water
4 cubes vegetable bouillon
5 medium bell peppers
3 medium tomatoes, chopped
1 (15 ounce) can black beans, drained
DIRECTIONS
Combine the millet, water and vegetable bouillon in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
Slice the tops off of the peppers, and remove the seeds and cores. Set aside. When the millet is done, stir in the tomatoes and black beans. Spoon into the peppers until filled. Place the peppers into a glass baking dish, and cover with plastic wrap.
Cook in the microwave for 10 minutes, or until peppers are tender. Turn peppers every 2 to 3 minutes to ensure even cooking
