Here is my favorite chicken recipe. Chicken-in-a-Cloud 3 1/2 c. hot mashed potatoes with cream cheese & only a little milk, no butter. 1 pkg. mixed vegetables, thawed & drained Filling: 1 1/2 c. cooked, cubed chicken 1 (10 1/2 oz.) can cream of chicken soup. 1/4 c. milk 1/2 tsp. dry mustard 1/4 tsp. garlic 1/4 tsp. pepper Grease a shallow, 2-quart baking dish. Make a shell with the mashed potatoes(spread over bottom and sides). Fill with the mixed vegetables; tsp with chicken filling. Spread 1 (2.8-ounce) can French-fried onions over chicken. Top with 1 1/2 cups shredded Cheddar cheese. Bake, uncovered, for 40 minutes at 375 degrees.

I get chicken wings. Remove the tips and give them to the cat. I then cut the remaining piece into 2 at the joint. I then marinade this in a big glass bowl. Mix together equal parts plum sauce and hoisin sauce, add a big piece of ginger finely grated, some crushed garlic, a good handful of sesame seeds. I like to leave this for at least 6 hours, stirring every so often. I then place the pieces on a tray and bake them in a hot oven for about 20 mins or until cooked through. Be careful they don't burn. You may have to turn the temp down a bit.

roasted stuffed chicken. you can use ground pork for stuffings with bread crumbs or croutons , bell pepper, onions , garlic , pineapple tidbits , sausages , evap milk , dash of pepper & salt. ( chicken relleno )

try fried?that's the only thing they like. you can make galantina, sure, but i doubt if they'll eat it. drumsticks are good, finger foods they can hold and run around with. i ordered from jollibee for my sister the other day, naturally, whe went nuts.;D

I posted this in another discussion, but since it is so good, and my kids (who are soooo finicky) love it, I'll share with you too :) Put whatever chicken you are making into a baking dish. Slice potatoes into wedges and add to the pan with the chicken (you get chicken and a side-dish out of this recipe). Then, squirt on a liberal amount of Italian dressing, making sure to brush it on the chicken. This does 3 things for you, tenderizes the chicken, keeps it moist while its baking, and adds a really nice flavor. Then, sprinkle that Parmesan cheese that you buy in the shaker can over everything and bake it until the chicken is cooked through (about 375 or so). The Parmesan makes everything kind of crunchy on top and it tastes sooo good. Good luck!

Basic Easy Chicken Wings These are super easy wings that your crowd will love. This recipe will make a great finger food for ten. Try your own variations with other sauces, spices, or peppers. Serve with celery sticks and bleu cheese dressing. INGREDIENTS 3 pounds chicken wings, separated at joints, tips discarded 1/2 cup butter 1 cup hot sauce 1/2 teaspoon cayenne pepper 1/4 teaspoon freshly ground black pepper DIRECTIONS Preheat grill for high heat. Lightly oil the grill grate. Cook the wings 8 to 12 minutes on each side, until juices run clear. The larger pieces will take slightly longer to cook. Melt the butter in a saucepan, and mix in the hot sauce, cayenne pepper, and black pepper. Place wings in a large container with a secure lid. Pour sauce over the wings, and seal. Shake wings with the sauce until thoroughly coated.

CHICKEN ADOBO..YOU NEED 1 WHOLE CHICKEN,1 TBSP PEPPER,1 TBSP SALT,1 CUP PEANUT OIL,1/4 DISTILEED WHITE VINEGAR,1 HEAD MACERATED GARLIC...HERE'S HOW TO DO IT!Cut your chicken into pieces, add the salt and pepper,then place it in a large sauce pan with the vinegar and macerated garlic letting it simmer until the chicken is tender.you can add water if you feel the chicken is getting dry.once it reaches the desired tenderness add the peanut oil and stir fry until the chicken is golden brown. hope you do it by your own way!

I recently tried a chicken stew served on potato apple mash that I've had requested every week. It's painfully simple...dice chicken thighs into 1" cubes, brown in a pan with salt, pepper, butter and tarragon. Remove from pan and saute thinly sliced french shallots and a bit more tarragon. Deglaze pan with apple cider and return chicken. Cover and cook down for about 30mins. While that's cooking boil potatoes and green apples for the mash. Finish by adding a bit of light cream to the chicken. Tastes great!
