Vegetarians - What's for dinner? or breakfast, or lunch....

Being a fairly new vegetarian, I often get stumped on what to fix for meals, especially if I haven't planned it well in advance. I thought we could share meal ideas - not necessarily recipes (unless you want to elaborate on ingredients for something you made up and doesn't really have a name). There are already a couple of discussions started for that if you do a search if you want to share a specific recipe. But rather, what are the combinations of foods you have had, are going to have or are your favoirtes that make up your every day meals?
Last night I made crepes stuffed with ricotto cream, with crushed strawberries and sliced bananas on top and hash browns on the side. Yes, breakfast for dinner which we like to do now and then but haven't done in a while. I had a craving for strawberries.
Tonight we had refried beans spread on tortilla, sprinkled with shredded cheese, warmed in the oven with spanish rice and corn.

tonight I am making a monster potato salad.
It will include corn, peas, onion, celery, asparagus, beans and anything else I find in the fridge. I never use mayonnaise only olive oil and vinegar - yummmm!
BTW we eat this warm on a cold ay and cold in the summer - both equally good.

Wow, how did I miss you post from 3 weeks ago?
This sounds yummy. I have done similiar with pasta, sometimes with mayo and sometimes various salad dressings for something different. But I have never thought to do the same as a potato salad. Will have to give it a try! Thanks.
